Oreo Bars, AKA Brookies – layers of brownie, chocolate chip cookies, Oreos, and drizzled with chocolate, what’s not to love?!

These are a fantastic treat that combines Oreo’s crunchy delight and brownies’ gooey goodness. And they’re all in one simple-to-make, impossible-to-resist dessert. Brownie Oreo bars are the life of the party, dessert, or simple snack, haha!

If you’re a fan of cookies and brownies, this will truly be a dream come true. Imagine biting into that amazing chocolate layer, crunching through an Oreo, and ending with a scrumptious, fudgy brownie base. Are you drooling yet? Because I am!

I can’t imagine a single person not loving these brownie cookie bars. Everyone I’ve shared them with has devoured them. Brownie and cookie lovers alike, these will be the best brookies you’ve had so far!

You might not have thought of this before, but pairing classic brownies with Oreos is a match made in dessert heaven. Add in cookie dough? You’re not going to know what to do with yourself!

Throw in a scoop of ice cream?? Ok, now I’m getting carried away. You get the picture, haha!

Get the kids in on this one. They’ll have a ton of fun pressing the oreos into the layer of cookie dough. My Lily especially likes pouring the brownie batter onto the cookies. Watching it all slowly get covered was great for her. She giggled the whole way through!

To top this all off, you will drizzle melted chocolate onto the top of the brownie layer when all is said and done. So let’s get going! Dive on into these Oreo bars, chocolatey brownies, chewy chocolate chip cookies, brookies, or whatever you want to call them – they are pure deliciousness.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):

  • Store-bought chocolate chip cookie dough
  • Oreo cookies (plus more for garnish)
  • Boxed brownie mix
  • Large eggs
  • Water
  • Vegetable oil
  • Rubber spatula
  • Melting wafers (for garnish, optional)

HOW TO MAKE OREO BARS:

  1. Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper.
  2. Press the cookie dough into the bottom of the prepared pan into an even layer for the chocolate chip cookie layer.
  3. Place the Oreos on top of the cookie dough and gently press it into the cookie dough.
  4. In a large bowl, combine the brownie mix with the ingredients on the back of the box; use the directions on the box for mixing.
  5. Pour the brownie mix on top of the Oreos and spread it evenly.
  6. Tap the pan on the counter a few times to help the brownie batter dispense in between the Oreos.
  7. Bake for 45-55 minutes until a toothpick inserted into the center comes out clean. Loosely tent with foil after the first 30 minutes.

  1. Let cool completely.
  2. Using the parchment paper to help, lift the bars out of the baking dish.
  3. Cut into squares on a cutting board.
  4. Chop up additional Oreos to use for garnish, and we used about 10 additional Oreos.
  5. Melt the chocolate wafers per the directions on the back of the package; you will need about 1 cup of melted chocolate.
  6.  Drizzle the melted chocolate onto the top of the brookies, immediately add crushed Oreos on top of each one and gently press them in.
  7. Allow the bars to sit for about 20-30 minutes until the melted chocolate has set, then serve.

DO I HAVE TO ADD THE TOPPING?

You can choose to skip the topping on this brookies recipe if you want.

Absolutely!

ANY SUBSTITUTIONS?

Keep in mind that some of these will change the flavor and texture of the bars quite a bit. That’s ok though!

  • Butter instead of vegetable oil for a richer taste

HOW TO STORE:

Refrigerator: Place the bars in an airtight container and keep them in the fridge. They can last for up to a week. Best eaten warm or at room temperature.

Stored at room temperature in an air tight container they will last up to 5 days.

Freezer: Wrap individual bars in plastic wrap, then in aluminum foil, and store them in a freezer bag. They can be frozen for up to 3 months.
