Red velvet everything is in high demand! I’m a huge red velvet fan, especially when it comes to these Cookies and Cream Brownies!
We just love a classic Red Velvet Cupcake, but I wanted to do something more. I really like a good homemade brownies recipe, they are cute, handheld, and so easy to customize.
Stuffing these Red Velvet Brownies with Oreos, then letting cookies and cream kisses melt on top and smoothing them out like a frosting, just take these over the top!
Jeremy even said this was the best dessert I’ve ever made… now that’s saying something! And trust me, I’ve made a lot of desserts in my day!
He said he really liked the combo of flavors. I mean, come on. Chocolate sandwich cookies mixed with red velvet? That’s gotta make the best brownie recipe ever. Right?!
This is a great, fudgy brownie recipe, and to top it off, we’ve got frosting on top of the brownie layer. This homemade brownie recipe just keeps getting better and better!

WHY THIS RECIPE WORKS:
- Easily available and minimal ingredients are used to make these.
- You can double the recipe if you like.
- You can switch out the topping for something different, like a cream cheese frosting, etc.
INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):
- All-purpose flour
- Cocoa powder
- Brown sugar
- Salt
- Unsalted butter melted
- Eggs
- Vanilla extract
- Red food coloring gel
- Oreo cookies
- cookies and cream kisses
HOW TO MAKE COOKIES AND CREAM BROWNIES:
- Preheat the oven to 350°F. Line a 9×9 baking pan with parchment paper and set aside.
- In a medium-sized bowl, add the flour, salt, and cocoa powder. Whisk to combine and set aside.
- In a large bowl, using an electric hand mixer, mix the melted butter and brown sugar until thoroughly combined.
- Add in the eggs one at a time and mix; add in vanilla and food coloring and mix to combine.
- Mix in about 1/4 of the flour mixture at a time until everything is combined, scraping the sides of the bowl as necessary.
- Place half of the brownie mixture in the bottom of the prepared baking dish, spreading to coat evenly.
- Next, layer in the Oreos.
- Pour the remaining batter on top and smooth the top. Bake for 18-20 minutes until a toothpick inserted into the middle comes out mostly clean (a few moist crumbs are fine).
- Place on a wired rack and immediately top with the kisses. Wait 10 minutes for the kisses to melt. Smooth them out with a spatula.
- Let cool completely, then place them in the fridge and let them set for an hour. (Or, if you prefer them warm, you can skip the fridge.) Cut into bars, serve, and enjoy!

WHAT KIND OF FOOD COLORING IS BEST TO USE?
I’m a big fan of the gel type of food coloring. It gives a deeper coloring to these fudgy brownies, and you don’t need to use as much.
A great recipe should have great ingredients and that gel food coloring is my go-to.

- White chocolate chips instead of cookies and cream kisses if unavailable
- Red Oreos substituted with regular Oreos or other festive colors depending on the occasion
- Boxed brownie mix for a quicker preparation, following the alternative mixing instructions

HOW TO STORE:
Cut brownies, stored in an airtight container or ziptop bag will last about 1-2 days at room temperature, if you leave them in the pan and cut as needed they will last a bit longer, up to 4 days.
You can also freeze this Red Velvet Brownie Recipe! I like to cut and individually wrap my pars in plastic wrap or tin foil and place in a freezer bag, they will keep for up to 3 months.
To defrost just let them sit on the countertop until they come to room temperature.

- We make these homemade, but if you want to make them using a boxed mix just mix with 1/3 cup oil and 2 eggs and you should get the same texture.
- If you can’t find cookies and cream kisses, any kisses will do, even the almond ones, white chocolate chips, or just top with cream cheese or buttercream frosting.
- You can switch up your Oreos for fun festive colors, I know usually this time of year they have red Oreos out that you can use as well.

Question do I have to melt the candy bars down or just place on top out the oven? I brought the mini cookies and cream Hersey bars?

These are absolutely GORGEOUS ❤️ I made this recipe for my family, but they came out very dry 🙁 I tried tweaking the recipe a bit because the batter was very thick. I’m thinking it’s a result of overcooking but I don’t know for sure..Do you have some tips?
Mine also came out extremely dry. The batter texture seemed more like a stiffer, whipped consistency so I also tried to adjust it a little. There’s definitely something up with this recipe, because it sounds and looks divine in the photos, but does not come out the same way.
As others have stated the batter is very stiff. I cooked them for only 24 minutes (I checked them and they were done by then) and they weren’t super dry but they were on the dry side. They were good but next time I think I will change (or use a different) brownie batter.
I agree with the others – something is missing in this recipe. The batter was so thick, there was no way to “pour” it in the pan. Missing a wet ingredient somewhere?
