Hi, friends! Today I am happy to share a super simple recipe with you. These lettuce wraps would be a great touch to a summer cookout, a fun appetizer to share with friends or even a light lunch option!
They are what I like to call a non-recipe recipe. Just gather up your ingredients and use as much or as little of them as you’d like! Easy peasy.
If you know me at all, you know that I love dishes that pack an explosion of flavor! And, wow, do these lettuce wraps deliver that punch. Chicken tenders tossed in buffalo sauce, topped with crunchy celery and red cabbage, drizzled with the best bleu cheese dressing and more bleu cheese crumbles… BAM! If you like buffalo any and everything… you have GOT to try these lettuce wraps!
What is really special about these buffalo chicken lettuce wraps is that bleu cheese dressing. I didn’t use any old dressing off the shelf. I picked up Litehouse Chunky Bleu Cheese dressing found in the refrigerated aisle by the produce. What makes this bleu cheese dressing special is the addition of extra award-winning artisan blue cheese chunks.
Why put room temperature dressing found in the condiment aisle on cold lettuce? Cold dressing, cold salad… it just makes sense!

Buffalo Chicken Lettuce Wraps
- 4 prepared chicken tenders
- 3 tablespoons buffalo sauce
- 1 head butter lettuce
- 1/2 cup thinly sliced red cabbage
- 1/2 cup thinly sliced celery
- Litehouse Chunky Bleu Cheese Dressing
- bleu cheese crumbles
- Cut chicken into bite sized pieces. Place in a bowl and toss with the buffalo sauce, set aside.
- Slice veggies and clean lettuce leaves thoroughly.
- Assemble lettuce wraps by placing desired amount of ingredients into the lettuce leaves, enjoy.
You can not mess this recipe up! I even bought the chicken tenders at the deli while I was shopping for the other ingredients. I place the tenders in the fridge to get them nice and cold before hand. This is just my preference, if you want your chicken warm, use them right away. This is a super fast, super flavorful dish!
