HOW TO MAKE BUFFALO CHICKEN LETTUCE WRAPS:
Cut chicken into bite-sized pieces.
Place in a bowl and toss with the buffalo sauce, set aside.
Slice veggies and clean lettuce leaves thoroughly.
Assemble lettuce wraps by placing the desired amount of ingredients into the lettuce leaves, enjoy.
You can not mess this recipe up! I even bought the chicken tenders at the deli while I was shopping for the other ingredients.
I place the tenders in the fridge to get them nice and cold beforehand. This is just my preference, if you want your chicken warm, use them right away.
This is a super fast, super flavorful dish! One that you will keep on your menu rotation for the long haul, even the kids like it. These days kids seems to love spicy foods.
WHAT LETTUCE SHOULD I USE?
For this recipe, I used butter leaf lettuce. I love how butter lettuce naturally has huge cups that are easy to just snap off, clean, and eat.
However, you do want to make sure the lettuce is sturdy enough to hold your filling. Butter lettuce is a tender leaf, but the cups are easy to wrap making them ideal.
More lettuce varieties you can use for lettuce wraps include iceberg lettuce and romaine lettuce as well, sometimes butter lettuce is hard to find.
Iceberg lettuce is a classic to use for any kind of chicken or beef lettuce wraps. It is a hearty lettuce that is crisp and will hold up to lots of filling, while still being tender.
Romaine lettuce is good as well, except the leaves do not make for the best cups. They are an awkward shape for lettuce wraps but the lettuce itself stands up to fillings and has a great crisp texture.
HOW TO STORE:
Lettuce wraps are not the recipe you will want to store for the long haul, you will want to eat them once they are made. You can however prep your ingredients ahead of time before you make them.
We do this a lot. We like to toss our chicken in the buffalo sauce, and separate our leaves in put them into baggies and chop our vegetables, so when we are ready to eat all we need to do is assemble.
TIPS AND TRICKS:
- We used deli chicken tenders for this recipe, but you can use frozen, cook according to package directions this will add some time onto the recipe itself.
- The best lettuce to use is butter, but there are other options, see above.
- You can make your own homemade blue cheese sauce or bottled for this recipe.
- If you are not a fan of blue cheese, ranch is always a good substitute.
- Feel free to add whatever other toppings you like, this is a great base recipe to build off of.

- 3 tablespoons buffalo sauce
- 1 head butter lettuce
- 1/2 cup thinly sliced red cabbage
- 1/2 cup thinly sliced celery
- Bleu Cheese Dressing
