Chicken Lettuce Wraps
September is National Cholesterol Awareness Month, and in celebration of this national holiday, I’m sharing these chicken lettuce wraps recipe with you!
Diced white meat chicken, mushrooms, water chestnuts, carrots, red cabbage, and green onions tossed in a flavorful soy-based sauce.
Served with lettuce cups and a spicy sauce to pour on top. It doesn’t get better than this!

Is corn oil good for frying?
Since corn oil is relatively low in saturated fats and monounsaturated fats, it’s very popular in both frying and baking as a better-for-you replacement of butter.
Mazola Corn Oil has a smoke point higher than most cooking oils at 450°F and performs well in a variety of cooking applications.
Many home cooks may not realize that all cooking oils have a smoke point that, once exceeded, not only negatively affects the food’s flavor but also its nutritional value.

How do you make lettuce cups from Iceberg lettuce?
Don’t want to use bibb lettuce for your lettuce cups? No biggie.
While Iceberg lettuce isn’t generally the type of lettuce I use for my chicken lettuce wrap recipe, you can use it to save some money.
Wash your Iceberg lettuce under cold water after trimming the excess lettuce leaves on the outside of the Iceberg lettuce.
Hold your Iceberg lettuce under the cold running water with the cut-core side up, and gently pull each layer away to use as a lettuce wrap for your Asian chicken lettuce wraps recipe.
How do I cook chicken cubes?
You can make your own diced chicken breast by cutting the chicken breast into bite-sized pieces.
Heat about 1 tablespoon of Mazola Corn Oil in a sauté pan over medium heat.
Add your bite-sized pieces of diced chicken breast to the sauté pan and cook for about 5-7 minutes, depending on the size of the pieces.
Once your chicken cubes are cooked thoroughly, you can easily make these chicken lettuce wraps to serve your family and friends!

How to make Asian chicken lettuce wraps?
Once your diced chicken is cooked through, take it out of the pan and set aside.
Add another 2 tablespoons of Mazola Corn Oil and sauté the mushrooms, carrots, red cabbage, and water chestnuts.
Sauté until tender-crisp, about 3 minutes.
Add the chicken back to the pan and toss with the chicken lettuce wrap sauce.
Add the green onions and toss to combine. Serve with lettuce cups and my homemade spicy dipping sauce on the side.

Chicken Lettuce Wraps
Ingredients
For the chicken mix sauce
- 1 tablespoon dark soy sauce**
- 1 tablespoon white wine***
- 1 tablespoon light brown sugar packed
- 1 tablespoon oyster sauce
- 3 cracks fresh black pepper
For the chicken mix
- 3 tablespoons Mazola corn oil divided
- 1/2 pound chicken breast small dice
- kosher salt to taste
- black pepper to taste
- 1/2 teaspoon garlic powder
- 1/4 cup shredded carrot
- 1/4 cup shredded red cabbage
- 1/4 cup diced water chestnuts
- 1/2 cup mushroom* chopped
- 3 scallions sliced, green part only
For the spicy dipping sauce
- 1/3 cup soy sauce
- 1/3 cup water
- 1/4 cup granulated sugar
- 1 tablespoon white vinegar
- 1 tablespoon prepared hot mustard
- 1 tablespoon spicy chili sauce
- 1 tablespoon green onion sliced, green part only
Serve with bibb lettuce cups
Instructions
For the chicken mix sauce
- Add all ingredients to a small bowl, whisk to combine, set aside. Make this first.
For the chicken mix
- Prepare all ingredients ahead of time, this cooking process is very fast. In a nonstick skillet over medium-high heat, once hot, add 1 tablespoon of the Mazola corn oil to the pan. Add the chicken, season with the salt, pepper, and garlic powder. Mix to combine. Cook until just done, about 5-7 minutes depending on the size of your chicken cubes. Once the chicken is done cooking, take it out of the pan onto a plate and set aside.
- Wipeout any excess juices from the pan, return the pan to the stove at medium-high heat. Once hot, add the remaining oil to coat the bottom of the pan. Add the carrots, red cabbage, water chestnuts, and mushrooms. Cook, stirring occasionally until tender-crisp, about 3 minutes.
- Add the chicken back to the pan, toss everything with the chicken mix sauce, add a little of the sauce at a time until you get the color and flavor you like, there might be a little sauce leftover, that's okay.
- Add the scallions to the pan and toss to combine. Serve with bibb lettuce cups and spicy dipping sauce.
For the spicy dipping sauce
- Add everything to a small bowl and whisk to combine. Add more or less hot mustard and chili sauce for your preferred spice level.
