These Mini BBQ chicken pizzas make an excellent dinner, lunch, or snack!
If you have chicken on hand already, these literally can go together in about 15 minutes, easy peasy.
How do you shred leftover chicken?
Shredding chicken breast is super easy. This recipe is so versatile, you can use rotisserie chicken, leftover chicken, or make some shredded chicken fresh for this recipe, up to you!
The best way to shred chicken breast is to heat up a skillet and add your chicken breast with olive oil. Sear both sides of your chicken breast until it’s golden brown, usually 3-4 minutes per side.
Add ¼ cup water and simmer your chicken breast covered for about 7 minutes. Be sure to check the internal temperature of the chicken so that it’s cooked to 165°F.
If you’re using leftover chicken you can simply heat with the water covered for up to 7 minutes. Once your chicken has simmered in a ¼ cup of water, remove your chicken and place in a bowl.
Using two forks you can now shred your leftover chicken to use in this homemade bbq chicken pizza.
I suggest heating the leftover baked or boiled chicken up before shredding, it just makes the job easier. However, if your leftover chicken is already shredded, just toss in bbq sauce and you are good to go!

Mini BBQ Chicken Pizza
Ingredients
- 1 small red onion thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 2 cups shredded chicken
- 1/3 cup bbq sauce*
- 8 ounces shredded Colby Jack cheese
- 3 tablespoons fresh cilantro chopped
- 6 Bays English Muffins
Instructions
- Preheat the oven to 350°F. In a small saute pan over medium-low heat, saute the red onion in the olive oil with the salt until slightly browned, stirring occasionally, about 8-10 minutes.
- Toss the shredded chicken in the bbq sauce in a small bowl, set aside.
- Place the English muffins on a baking sheet, cut side up. Top the muffins with the bbq chicken, onions, and cheese. Bake for 5-8 minutes until heated through and the cheese is melted. Top with the cilantro.
