I don’t know about you but I love food in handheld form, always have, always will. A little personalized treat just for me, and when it is easy to throw together it’s even better!
Ever since I was little I have loved English muffins, something about them is just warm and comforting and reminds me of my childhood.
From the chicken to the cheese, bbq sauce, and caramelized red onion, these are just Heavenly, but to top them off with fresh cilantro give these pizzas a little fresh pop, irresistible.

INGREDIENTS NEEDED (FULL RECIPE BELOW):
Red onion
Olive oil
Kosher salt
Shredded cooked chicken
Sweet BBQ sauce
English muffins
Colby Jack cheese
Fresh cilantro
HOW TO MAKE ENGLISH MUFFIN PIZZA:
- Preheat the oven to 350°F. In a small saute pan over medium-low heat, saute the red onion in the olive oil with the salt until slightly browned, stirring occasionally, about 8-10 minutes.
- Toss the shredded chicken in the bbq sauce in a small bowl, set aside.
- Place the English muffins on a baking sheet, cut side up. Top the muffins with bbq chicken, onions, and cheese. Bake for 5-8 minutes until heated through and the cheese is melted. Top with the cilantro to serve.
HOW TO MAKE SHREDDED CHICKEN?
If you don’t have leftover shredded chicken on hand, I like to use a rotisserie chicken and shred it, or you can cook chicken for these English Muffin Pizzas.
The best way to cook chicken breast for this recipe is to heat up a skillet over medium heat, and add 1 tablespoon of olive oil. Add the chicken breasts and sear both sides until it’s golden brown, usually 3-4 minutes per side.
Add ¼ cup water and simmer your chicken breast covered for about 7 minutes. Be sure to check the internal temperature of the chicken so that it’s cooked to 165°F.
Using two forks you can now shred your chicken to use in this homemade bbq chicken pizza.
I suggest heating the leftover chicken up before shredding, it just makes the job easier. However, if your leftover chicken is already shredded, just toss in bbq sauce and you are good to go!
CAN I ADD ANYTHING TO THIS RECIPE?
Of course! Some other yummy toppings and sauces I suggest are a drizzle of more bbq sauce, ranch, or even garlic aioli.
Thinly sliced scallion, chives, or parsley would make a good garnish.
Add some additional spices, I suggest adding some onion powder, garlic powder, chipotle powder, cayenne powder, or bbq seasoning to the chicken when you are tossing it with the bbq sauce.
WHAT OTHER FLAVORS CAN I MAKE?
Take this recipe as a base and add to it. You can make these fully customizable.
Use pizza sauce, shredded mozzarella, and mini pepperoni for a traditional English Muffin Pizza.
Just top with your favorite sauce, cheese, and protein and you are good to go! Just follow the cooking time directions.
HOW TO STORE:
Store any leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave until warmed through.
Freeze for up to 3 months. If baking from frozen, it may take longer to cook. My best suggestion is to check the internal temperature of the pizzas so they reach 165°F to ensure a proper cooking time.
