How do you shred leftover chicken?
Shredding chicken breast is super easy. This recipe is so versatile, you can use rotisserie chicken, leftover chicken, or make some shredded chicken fresh for this recipe, up to you!
The best way to shred chicken breast is to heat up a skillet and add your chicken breast with olive oil. Sear both sides of your chicken breast until it’s golden brown, usually 3-4 minutes per side.
Add ¼ cup water and simmer your chicken breast covered for about 7 minutes. Be sure to check the internal temperature of the chicken so that it’s cooked to 165°F.
If you’re using leftover chicken you can simply heat with the water covered for up to 7 minutes. Once your chicken has simmered in a ¼ cup of water, remove your chicken and place in a bowl.
Using two forks you can now shred your leftover chicken to use in this homemade bbq chicken pizza.
I suggest heating the leftover baked or boiled chicken up before shredding, it just makes the job easier. However, if your leftover chicken is already shredded, just toss in bbq sauce and you are good to go!
Can you shred chicken in a stand mixer?
Simply place your cooked chicken into the mixer using the paddle attachment on low to medium speed until your chicken is shredded to the texture you desire for use in the pizza bbq chicken recipe below.
What is healthy to put on English muffins?
While this homemade bbq chicken pizza is made using Bays English Muffins, you can put other healthy options on your English muffins.
I personally enjoy serving Bays English Muffins with butter and jelly on top, but a healthier option is to top your English muffin with cottage cheese for breakfast.
Bays English Muffins come pre-sliced making it easier to create this homemade bbq chicken pizza.
I don’t know how many times I’ve tried to cut an English muffin in half only to find I can’t seem to get it evenly sliced.
Bays English Muffins can be found in the dairy section of your local grocery store and come pre-sliced to avoid the slicing dilemma that occurs with other English muffin options.
I enjoy having Bays English Muffins on hand as Bays elevates any occasion. My family enjoys a delicious, fast dessert of Bays English Muffins topped with butter and jelly as a simple yet yummy dessert idea!
Do English muffins go bad?
Yes, always go by the sell-by date, but since Bays English muffins are in the dairy section, I always keep them in the refrigerator.
You can store English muffins in the freezer wrapped up tightly in a freezer-friendly storage bag.
The best way to tell if your English muffins have gone bad is to smell them.
There will be an off smell coming from the English muffins or signs of mold, in both cases, you should discard your English muffins as they probably have gone bad.
Bay’s English Muffins are the only brand of English muffins my family buys, including my Mom, Aunt, and Grandma! We just love the softer, fluffier texture and exceptional taste of Bay’s.
Can I freeze homemade pizza?
I usually make this pizza bbq chicken recipe when I’m about to serve it.
Since this recipe doesn’t take a lot of time to create, there hasn’t been a time when I’ve had to freeze my homemade bbq chicken pizza!
But, if you’re thinking about making these ahead of time, yes you can freeze your homemade bbq chicken pizza. This is a great idea for make-ahead meal prep!
Store your mini bbq chicken pizzas in plastic wrap, place into a freezer-safe sealable plastic bag, and place in your freezer.
My best tip is to double wrap your homemade bbq chicken pizza’s individually so that they’re airtight and stay fresh.
You’ll thoroughly enjoy this delicious combination of shredded chicken mixed with bbq sauce, sautéed red onions, shredded Colby jack cheese, and fresh cilantro that’s made in just a few minutes in your oven!
You just need to heat this pizza bbq chicken recipe through and wait until the cheese is completely melted.
If baking from frozen, it may take longer to cook. My best suggestion is to check the internal temperature of the pizzas so they reach 165°F to ensure a proper cooking time.
