Brookies are the dessert that ends every argument in our house, with a fudgy brownie top, a chewy chocolate chip cookie bottom, and a whole hidden layer of Oreos in the middle. I threw these together on a rainy Saturday when Maddie begged for something with Oreos and Lizzie wanted brownies, so this lazy mashup kept everybody happy. If you love our golden Oreo strawberry cheesecake bars, these are the gooey chocolate cousin.

Built almost entirely from boxed mixes, these Brookies look bakery fancy but only take about fifteen minutes of hands on work.

Quick Answer
Brookies are a layered bar made by pressing store bought chocolate chip cookie dough into a 9×13 pan, covering it with a single layer of Oreos, then pouring prepared fudge brownie batter on top. Bake at 350 degrees until a toothpick comes out clean, cool completely, then cut into squares and drizzle with melted chocolate. Using boxed cookie dough and brownie mix means you get three desserts in one bar with barely any measuring.

Why This Recipe Works
Click to see the technique science
- Boxed mixes do the heavy lifting. Store bought cookie dough and a fudge brownie box give you reliable texture and flavor without measuring flour, so the only real skill is layering.
- The Oreo layer stays crisp. Sandwiching whole Oreos between the dense cookie base and the brownie batter shields them from the wet batter, so they keep a little snap instead of going soggy.
- Tenting with foil prevents a dry top. Loosely covering the pan after thirty minutes lets the thick center finish baking before the brownie surface overbakes.
- Parchment makes clean squares. An overhang of parchment lets you lift the whole slab out and cut on a board, so you get sharp edges instead of crumbly scoops.
- The chocolate drizzle sets like a bakery finish. Melting wafers firm up at room temperature, locking the crushed Oreo garnish in place for a polished, gift worthy look.
Why You’ll Love This Recipe
- You get brownie, chocolate chip cookie, and Oreo all in one square, so nobody has to pick a favorite dessert.
- It starts with boxed mixes, which makes these Brookies perfect for beginner bakers and last minute potlucks.
- They travel and slice beautifully, just like our
Key Ingredients
These Brookies lean on a few smart shortcuts, so quality matters more than quantity here.
- Store Bought Cookie Dough: A 30 ounce tube of chocolate chip cookie dough is the chewy base. Refrigerated dough presses in easier than frozen.
- Fudge Brownie Mix: A box of chewy fudge brownie mix forms the rich top layer. Grab the family size 9×13 box so it covers the whole pan.
- Oreos: A family size pack gives you enough for the hidden middle layer plus crushed Oreos for garnish.
- Chocolate Melting Wafers: These set firm at room temperature for that glossy bakery drizzle. Dark wafers work great if you want it less sweet.
- Box Add Ins: You will also need the eggs, oil, and water called for on the back of the brownie box.

Variations and Substitutions
These Brookies are a blank canvas, so swap the layers to match whatever you are craving.
- Switch the sandwich cookie: Use Golden Oreos, mint Oreos, or peanut butter cookies in place of classic Oreos.
- Add a candy layer: Press chopped Reese cups or candy bar pieces into the cookie dough before the Oreos.
- Make it extra fudgy: Underbake by a few minutes and chill before cutting for a denser, almost truffle like center.
- Go peanut butter: Drizzle melted peanut butter over the top alongside the chocolate, like our How to Make Brookies
- Press the chocolate chip cookie dough into an even layer across the bottom of a parchment lined 9×13 pan, pushing it all the way to the edges.
- Arrange the Oreos in rows on top of the cookie dough and gently press them in so they nestle into the base.
- Mix the brownie batter per the box, pour it over the Oreos, and spread evenly, tapping the pan so the batter settles between the cookies. Bake at 350 degrees until a toothpick comes out clean, tenting with foil after the first thirty minutes.
- Cool completely, lift the slab out using the parchment, then cut into squares. Drizzle with melted chocolate and press crushed Oreos on top before the chocolate sets.
Recipe Tips & Tricks
- Use refrigerated cookie dough, not frozen, so it presses into the pan smoothly without tearing.
- Tent with foil after thirty minutes to keep the brownie top from overbaking while the thick center finishes.
- Cool completely before cutting, ideally an hour, or the layers will smear instead of slicing clean.
- Wipe your knife between cuts with a warm damp towel for neat, bakery style squares.
- Drizzle while the bars are cool but add the crushed Oreos immediately so they stick before the chocolate sets.
- Store in an airtight container at room temperature for up to four days, or freeze for longer.

Brookies FAQs
Can I make Brookies from scratch instead of boxed mixes?Absolutely. Swap the store bought cookie dough for your favorite homemade chocolate chip cookie dough and use a scratch brownie batter. The layering and baking steps stay exactly the same, so your Brookies will look identical.
Why did my Brookies turn out underbaked in the middle? The thick three layer structure needs the full bake time. If the center is gooey, the toothpick test came out too early. Tent with foil and keep baking in five minute increments until a toothpick from the center comes out with just a few moist crumbs.
How do I cut Brookies into clean squares?Cool the bars completely, then lift the whole slab out by the parchment and cut on a board with a sharp knife. Wipe the blade clean between cuts and you will get sharp, bakery style Brookies.
Can I freeze Brookies?Yes. Freeze the cut bars in a single layer, then transfer to an airtight container for up to three months. Thaw at room temperature, and add the chocolate drizzle and crushed Oreo garnish after thawing for the freshest look.
What kind of brownie mix works best for Brookies?A family size fudge brownie mix made for a 9×13 pan is ideal because it spreads to cover the full Oreo layer. Cake like brownie mixes also work, but fudgy ones give that classic dense Brookie texture.
How long do Brookies stay fresh?Stored in an airtight container at room temperature, Brookies stay soft and chewy for about four days. For longer storage, freeze them and thaw as needed.
