For me, the perfect steak is the one I don’t have to work very hard on. Ha! Seriously though, this recipe makes sure your steak cooks perfectly, every time.
The slow cooker is one of my favorite kitchen items. So many juicy bites of heaven are made in that thing.
Not only are we talking about great flavor in the steak here, but the savory sauce needs to be mentioned as well.
In the end, when you open the lid of your slow cooker, you’ll be presented with a comfort food that your family will absolutely devour.
My husband is a huge fan of steak. He’s very particular about how he cooks it. While this recipe doesn’t come out medium rare, as he says is best, he scarfed down his portion in an eye blink!

- Sirloin steak
- Kosher salt
- Black pepper
- Vegetable oil
- Sweet onion
- Garlic
- Unsalted beef stock
- Au jus gravy mix
- Unsalted butter
- Fresh parsley (optional for garnish)
HOW TO MAKE SLOW COOKER STEAK BITES:
- Place the steak into a large bowl with the salt and pepper and toss to combine.
- Get a large skillet hot over medium-high heat and add half of the oil. Sear off the steak pieces in batches and place them into an 8-quart slow cooker. Add more oil to the pan if needed.
- Once all the steak is seared, add the onion and garlic to the slow cooker, toss with the steak bites.
- Pour in the beef stock. Sprinkle the au jus packet over the top. Lay slices of the butter over the top.
- Cover the slow cooker and cook on high for 3-4 hours or low 6-8 hours. Stir every 30 minutes or so if you can. Serve with a garnish of fresh parsley if using.

WHAT KIND OF STEAK IS BEST TO USE?
Sirloin steak works great for this recipe because it’s tender and flavorful.
However, you can also use round steak, stew meat, or chuck roast.
Some of the tougher cuts of meat are made more tender by the slow cooking process.
DO I HAVE TO SEAR THE STEAK?
Searing the steak is optional, but it adds a rich flavor to the steak bites. I highly recommend using the sear method with all kinds of beef.
