This Herb Marinated Grilled Pork Chop Recipe is a moist and delicious marinade for pork (and chicken!) consisting of herbs, honey and whole grain mustard.
We are big pork chop lovers around here. They are such an easy meat to whip up in so many different ways we love this Herb Marinated Grilled Pork Chop Recipe the best.
But we have made them so many different ways over the years but I just can’t get over the flavor of this marinade. I absolutely love marinading meats and this right here is it!
This is literally my favorite marinade for pork and for chicken, it works very well with both so we use it all the time when we are grilling either of those meats.
I’m also a big lover of bone-in pork chops as well so that is what cut we usually use for this Grilled Pork Chop Recipe, it certainly will work with other cuts but this is what we are using today.
You really can’t go wrong with a perfectly grilled pork chop that has been marinated to perfection. It is tender, juicy and absolutely delicious and you can serve it with any of your favorite sides.

INGREDIENTS NEEDED (FULL RECIPE BELOW):
Bone in pork chops
Pesto
Olive oil
Garlic
Apple cider vinegar
Honey
Whole grain mustard
Kosher salt
Pepper
Parsley for garnish, optional
HOW TO THIS MAKE HERB MARINATED GRILLED PORK CHOP RECIPE:
- Place pork chops in a plastic zip top bag and set aside.
- In a small bowl mix the pesto, olive oil, garlic, vinegar, honey, mustard, salt, and pepper together.
- Pour the marinade over the pork chops and make sure they are coated in the marinade. Seal the bag and place it in the fridge to marinate for at least 2 hours up to overnight, turning the bag over every few hours, if possible.
- Take the pork chops out of the marinade and set them on a plate. Place the remaining marinade in a small saucepan or skillet and bring it to a simmer over medium heat, immediately remove the pan and set aside.
- Preheat the grill to medium heat and oil the grates.
- Grill the pork chops until just cooked through and a thermometer inserted in the thickest part of the chop reads 160°F degrees.
- Flip the chops about halfway through, try not to move them too much so they get a good sear. Brush the chops a couple of times with the leftover marinade within the first 5 minutes of grilling, then discard any remaining marinade.
- Serve immediately with parsley garnish, optional, and desired sides.
How much easier can you get than these Herb Marinated Grilled Pork Chops?! Seriously they really do not take much effort at all and we love that.
AT WHAT TEMPERATURE ARE PORK CHOPS DONE?
Pork is relatively safe to eat once you insert an instant read thermometer and it reads 160 degrees F. This is the safest temperature that you will want to eat pork at.
Having a good instant read thermometer on hand is a great addition to your kitchen gadgets, especially if you eat a lot of meat. They are relatively cheap and you will get your use out of them!
HOW DO I GRILL?
This can either be grilled on a regular grill or on your stove top on a grill pan. We make them both ways depending on the weather and such.
You will want to set both of these on medium setting so they can cook evenly, personally I like to use a regular grill but sometimes options are limited.
Once your internal temperature reaches that 160 degrees F you are good to go!
HOW TO STORE:
This Herb Marinated Grilled Pork Chop Recipe can be stored in an airtight container and kept in the refrigerator where they will be good for up to 3-4 days.
To reheat these, we like to preheat our oven to 350 degrees and place them in a oven safe pan with a little bit of water (1-2 Tbs). We then cover with foil and bake for about 10-15 minutes until heated through.
TIPS AND TRICKS:
- You can also use dried Italian seasoning in place of the pesto, 1 tablespoon will be enough.
- This can also be made on the stovetop using a grill pan.
- You can use this marinade on chicken as well!
- Other cuts of pork can be used but cooking time will be different.
- Easily double this recipe to feed a larger crowd.
- Marinating for at least 2 hours is a must, longer if possible.
