Ingredients
- 1 ½ cups water
- 2 Tablespoons granulated sugar
- 1 black tea bag
- 1 medium peach peeled, sliced, core removed
- 1 sprig mint leaves taken off the stem
- Ice cubes
- 2 scoops vanilla ice cream
- ¼ cup blueberries or fresh berries of your choice
Instructions
- In a medium saucepan combine sugar and water. Bring to a boil, stirring, until the sugar has dissolved.
- Add the tea bag and let it steep for 5 minutes. Remove the tea bag and chill the tea until ready to assemble.
- Take 2 tall glasses, and add the sliced peaches and mint leaves equally to each glass.
- Using a muddler, muddle the peach and mint until it is crushed well and fragrant.
- Fill each glass with ice cubes halfway through. Add cooled tea divided between each glass.
- Top with 1 scoop of ice cream in each glass. Garnish with peach, mint leaves, and some fresh berrie. Serve immediately.
Notes
- This makes 2 drinks but can easily be doubled to make more.
- Make sure you peel your peaches, we don’t want the skins in the tea.
- You can use your favorite vanilla ice cream including vanilla bean, new york, etc.
