Super easy and extra tasty, this Banana Icebox Cake is a fun no bake recipe that requires minimal ingredients that the whole family will love.
I love a good old fashioned no bake dessert, I love bananas. So this pairing for this Banana Icebox Cake is absolutely fabulous, we cannot get enough and neither will you.
This takes minimal ingredients to assemble and comes together quickly, the only thing you have to worry about is letting it set up, otherwise it takes care of itself.
With layers of pudding, whipped cream, and graham crackers, you really cannot get any more simple than that. Plus it is utterly delicious.
Icebox Cakes are one of my favorite things to make because they can be made in so many different flavors, this Banana Icebox Cake is my favorite, though because…well banana.
This is adult and kid-friendly and is great to make ahead, so it is perfect for gatherings and get-togethers all year long. It is one dessert we love to take with us.
If you are a banana lover like me and don’t want to heat up your kitchen, then you absolutely must make this Banana Icebox Cake.

WHY THIS RECIPE WORKS:
- Minimal ingredients are needed.
- You can switch up the flavors to your liking.
- This is a great make-ahead dessert for gatherings.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Instant banana cream pudding mix
Milk
Whipped topping
Graham crackers
Banana slices for garnish
HOW TO MAKE A BANANA ICEBOX CAKE:
- In a large bowl, add the banana cream mix and the milk, whisk until combined, and then continue to mix until it starts to thicken, about 1 minute.
- Fold in 1 container of whipped topping. Set aside.
- Place 1/4th of the graham crackers into the bottom of a 9×13 baking dish. You may need to break some of the graham crackers up to fit.
- Add ⅓ of the pudding mixture on top and smooth it out. Repeat 2 more times. Add the last of the graham crackers on top, you will have a couple of small pieces left over, but that’s okay, keep them for garnish if desired.
- Smooth out the remaining container of whipped topping so none of the graham crackers are exposed. Cover with plastic wrap and place in the fridge for at least 6 hours, or even best overnight.
- Top with some of the crushed leftover graham crackers and fresh banana slices if desired, slice and serve.
WHY AND HOW LONG DOES THIS NEED TO CHILL?
This needs to sit so the pudding mixture can set and the graham crackers will absorb the pudding/whipped topping and become soft.
You will need to chill this for at least 6 hours, or overnight is even better. This is why it makes the perfect make-ahead dessert since it needs to chill anyways.
CAN I USE OTHER PUDDINGS?
This is a very versatile and basic recipe that you can make in so many different flavors and it will taste amazing.
Some of our other favorite flavors that we have used in the past or want to try include, chocolate, lemon, vanilla, French vanilla, cheesecake, white chocolate, coconut, etc.
If you have a pudding flavor that you love most, you can absolutely try it and it will work in this recipe, just switch out the toppings for something that will compliment it.
CAN I USE COOK AND SERVE PUDDING?
No, you will need instant pudding mix for this recipe. Unfortunately, the way the two are designed for cooking/baking, the cook and serve just will not work with this recipe.
So make sure that you check the label, when it’s instant they like to try and hide it and its smaller, the cook and serve will stand out more.
HOW TO STORE:
This can be stored in the pan in the refrigerator covered with plastic wrap or foil, where it will keep for up to 4 days.
This can also be frozen, wrap in plastic wrap and then a layer of foil and it will keep in the freezer for up to 3 months.
To defrost, remove to the refrigerator overnight, or you can also serve this frozen.
TIPS AND TRICKS:
- Some good toppings for this would be banana slices, crushed graham crackers, vanilla wafers, chocolate sauce, or caramel sauce.
- Make sure that you use instant pudding.
- You can make your own homemade whipped cream, just make sure that you have enough.
- This needs to chill for at least 6 hours.
- This is a great dessert to make ahead for gatherings.

I am confused on the amount of instant pudding needed. I am just trying to do more baking. 6.8 ounce 2 3.4 ounces. Please clarify how many packages of pudding mix is needed or a total number of ounces. This is confusing to me. Thank you.
