I am sooo obsessed with these Shrimp Skewers, like seriously! They are sooo good, slightly sweet with the smokiness from the grill really let the Asian marinade shine!
These are probably the best shrimp I have ever had, marinade-wise. I am a hardcore lover of a simple shrimp cocktail but I’m equally as happy with these babies as well!
They are such an easy recipe to make and you can make them indoor or outdoor. I love to grill, you guys probably know that by now, but it is not a lie.
We are lucky enough to have decent weather all year long where we have the luxury to grill, but some people don’t so we do like to make things that you can also make indoors.
These Shrimp Skewers are the perfect dinnertime, or lunchtime meal. They also can make a pretty good appetizer too, the marinade is amazing and really makes them what they are!

WHY THIS RECIPE WORKS:
- With a super simple marinade, it really makes this recipe what it is!
- You can double this to serve more guests.
- You can have this as an appetizer or a meal with dinner or lunch.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Unsalted butter
Soy sauce
Lime juice
Ginger
Garlic
Granulated sugar
Scallions
Shrimp
HOW TO MAKE ASIAN MARINATED GRILLED SHRIMP SKEWERS:
- Place the butter, soy, lime juice, ginger, garlic, and sugar in a small saucepan and whisk to combine. Let it come to a simmer over medium-low heat, stirring occasionally, then take it off the heat, stir in the scallions, and let cool on the counter to room temp.
- Place the shrimp and marinade in a bag or bowl covered in plastic wrap and marinate for at least an hour in the fridge. Try to let them marinade for around 3-5 hours but no longer.
- Take the shrimp out of the marinade and place them on skewers. If using wooden skewers, let these soak for 30 minutes in water.
- Place the remaining marinade back in the small saucepan and bring it to a simmer, simmer for 1 minute and take it off the heat.
- Preheat the grill to high heat and oil the grates. Place the shrimp skewers on the grill and get a nice char on all sides. Do not overcook or shrimp will become rubbery. This will only take about 3-4 minutes per side, depending on how big the shrimp are. Baste the shrimp with the marinade every few minutes.
- Serve with a garnish of more sliced scallions. Keep any remaining marinade on the side for dipping.
HOW LONG SHOULD I MARINATE?
For this recipe, I recommend a good marination time between 3-5 hours. No longer than that, so these are great to prepare in the morning for lunch or afternoon for dinner.
WHAT KIND OF SHRIMP SHOULD I USE?
We like to use large uncooked peeled and deveined shrimp. You can use any size that you want, large is a great size for this recipe and I wouldn’t recommend going smaller.
If you want to use extra-large or colossal shrimp you can do that as well, you will end up with fewer Shrimp Skewers but you will have about the same amount of food.
WHAT CAN I SERVE WITH THIS?
Since this already has a big flavor we usually serve it up with some rice, broccoli, or other sorts of vegetables. You can also just serve it on its own as an appetizer if you don’t want to make it as a meal.
HOW TO STORE:
Grilled Shrimp can be stored in an airtight container in the refrigerator for up to 3-4 days. You can reheat it in the microwave or toss it on the grill quickly to get it warm.
TIPS AND TRICKS:
- If you don’t have a grill or want to make this when you aren’t able to utilize a grill an indoor grill pan can be used.
- You want to marinate between 3-5 hours but no longer.
- We like to use large shrimp for this but extra-large or colossal will work well too, just not smaller as they shrink when cooking.
- This is great as a whole meal or an appetizer.

These were delicious! Marinated for a little over an hour and cooked on a gas grill with all the burners on high. We got a bit of char in the outside but the shrimp stayed juicy and tender. Leftovers were great in salad the next day.

Thanks for this recipe! Just out of curiosity, why do you limit the marinade time to max 5 hours? (I have a BBQ tomorrow and I was thinking of prepping this beforehand to leave it overnight).

Marinating certain meats and seafood too long will break down the meat and create a mushy texture that ruins it. The acids in the marinade cause the breakdown.
