Smoky Chipotle Mexican Street Corn Recipe is sweet fresh corn grilled over open flame, smeared with a smoky chipotle mayo. Then topped with grated cheese, cilantro and lime!
You are about to make and consume the most delicious corn on the cob on the planet. This is not opinion… this is fact. You can quote me on that.
Sweet, fresh corn, slathered in a smoky, slightly spicy mayonnaise. Top it with fresh grated white cheddar cheese, chopped cilantro, and a squeeze of lime. Seriously, there is not more that needs to be said!
This Mexican Street Corn Recipe has been one of my favorites for a long time now. We were introduced to it years ago and I had made some tweaks to the recipe to really make it how I loved it.
Let’s just say that the tweaks work perfectly for this corn, and you will be wanting to make it over and over again. Plus it’s grilled so that is another thing that we love.
If you have been reading for any time now you know that I absolutely love to grill. So when I get a chance to I will grill all the things that I can and this Mexican Street Corn is one of them.

WHY THIS RECIPE WORKS:
- With easy-to-find ingredients and spices this is easy to put together.
- You can double this recipe to serve more for guests.
- You can cater your spice level in the mayo to your liking.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Mayonnaise
Garlic powder
Chili powder
Dried chipotle powder
Kosher salt
Pepper
Corn
Olive oil
White cheddar cheese
Cilantro, garnish
Limes, garnish
HOW TO MAKE THIS MEXICAN STREET CORN RECIPE:
- Prepare the chipotle mayo by mixing the mayonnaise, garlic powder, chili powder, chipotle powder, salt, and pepper in a bowl until combined. Set aside in the fridge until ready to serve.
- Brush the corn with olive oil and place them on a sheet tray.
- Grill the corn over medium heat until charred on all sides. This can take 10-15 minutes.
- Take the corn off the heat, let cool slightly to touch, and brush the mayonnaise mixture all over the corn.
- Top with the cheese, cilantro, and a squeeze of lime, enjoy!
How easy is this recipe? For real! This is why we absolutely love it. I’m obsessed with all the easy recipes and this Street Corn is absolutely one of them.
WHAT KIND OF CHEESE CAN I USE?
While Cojita is the traditional cheese used for this recipe we like to use freshly shredded white cheddar, it’s just a personal choice for us.
You can also use Queso Fresco for this, it is a great crumbling cheese that is used in a lot of Mexican dishes and would be amazing on this Mexican Street Corn Recipe.
DO I HAVE TO GRILL MY CORN?
While grilling the corn is the best way to get the char on it and give it its flavor if you don’t have an outdoor grill you can use a grill pan and grill this indoors as well.
If all else fails, you can just boil your corn up until it is done and use it that way. There is no right or wrong, you can still make this recipe taste great without having to grill your corn.
HOW TO STORE:
While best served right away if you do have leftovers, place them on a plate and cover them with plastic wrap and these should keep in the refrigerator for up to 4-5 days.
TIPS AND TRICKS:
- You can cook this on an outdoor grill or use an indoor grill pan, if you don’t have either you can just boil up your corn and use it that way.
- Control your own spice level of the mayo mixture, taste as you go.
- You can easily double this recipe to serve more people.
- We like to use freshly shredded white cheddar but you can also use cojita or queso fresco.
