HOW TO MAKE loaded french fries:

  1. Carefully add the fries to the hot oil in batches, frying until golden brown and crispy.
  2. Remove from the oil and let them drain on paper towels. Season with salt while still hot.
  3. Preheat the oven to 375°F (190°C).
  4. Place the fried fries in a baking dish.
  5. Sprinkle shredded cheese and chopped bacon over the fries.
  6. Bake in the preheated oven for about 10 minutes, or until the cheese is melted.
  7. Drizzle the cheese sauce over the baked fries.
  8. Sprinkle additional bacon and scallions on top.
  9. Serve with a dollop of sour cream.
