Cranberry White Chocolate Cookies, soft and chewy cookies, loaded with cranberries and warm spices!

Hello This Silly Girl’s Kitchen readers! I am so happy to be here sharing recipes with you. I’m Kathy from Penney Lane, where I share lots of family friendly recipes and our latest travel adventures. It may not feel like it yet, but fall has officially begun and so I’m sharing an easy cookie today that has some of fall’s great flavors. These cookies have that fall staple of cranberries but there’s also a hint of cinnamon and nutmeg, and to cut the tart of the cranberries there’s white chocolate pudding!

Cranberry White Chocolate Cookies

Total Time 15 minutes
Servings 2 dozen

Ingredients

  • 1 cup butter
  • 3/4 cup packed brown sugar
  • 1 package white chocolate instant pudding
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 package 9 oz cranberries

Instructions

  1. Preheat oven to 350 degrees Farenheit.
  2. Cream butter, brown sugar, white chocolate pudding mix, sugar, cinnamon, vanilla, and nutmeg in a large mixing bowl with either stand or hand mixer.
  3. Add eggs one at a time, mixing well after each egg.
  4. Slowly add the flour and baking soda, mixing on low until blended.
  5. Stir in the cranberries.
  6. Using a teaspoon or cookie scoop drop the cookies onto ungreased baking sheets.
  7. Bake 10 minutes or until golden brown.

What I love about these cookies are how simple they are to make, but also that the ingredients are limited and so you’re able to taste each flavor from the cranberries to the cinnamon and the nutmeg too.

I adapted this recipe from the cookbook The Cookie Bible which has some great recipes in it. This recipe makes about 2 dozen so it would be perfect for cookie exchanges or food gifts this holiday season. Another reason I love them is that they’re soft and chewy.
