Breakfast sliders are how I feed a hungry crowd on a slow weekend morning, warm little sandwiches stuffed with sausage, eggs, and melty cheese on toasty everything bagels. I made a pan of these on a *lazy Saturday* and Maddie and Lizzie each grabbed two before they even hit the table. They take about 25 minutes start to finish. If you love easy breakfast bakes, our overnight breakfast casserole is another family favorite.

Quick Answer

How do you make breakfast sliders?

Cook the sausage patties in a skillet until browned, then scramble the eggs in the same pan. Place the bottom halves of mini everything bagels in a 9×13 dish, top each with a slice of cheese, a sausage patty, scrambled eggs, and another slice of cheese. Add the bagel tops, then brush them with melted garlic butter. Bake at 375 degrees F for 10 to 15 minutes until the cheese is melted and the bagels are golden. Serve the breakfast sliders warm, right out of the pan.

Here is everything you need to make these bagel breakfast sliders.

  • Sausage patties: Browned breakfast sausage patties are the savory, hearty center of every slider. Cook them first so they release flavorful grease for the eggs.
  • Eggs: Scrambled right in the sausage pan so they soak up all that flavor. They add fluffy protein to each slider.
  • Mini everything bagels: Toasty, chewy, and full of that everything seasoning flavor. They hold up much better than soft rolls.
  • Cheddar cheese: Two slices per slider, one under and one over, so it melts around the sausage and eggs.
  • Butter and garlic salt: Melted together and brushed on the bagel tops for a golden, savory, garlicky finish.

Variations and Substitutions

These breakfast sliders are easy to customize. Here are a few ideas.

  • Swap the sausage for bacon, ham, or Canadian bacon for a different breakfast slider.
  • Use plain, sesame, or asiago bagels instead of everything bagels.
  • Add a swipe of cream cheese to the bagels before layering for extra richness.
  • Use Hawaiian rolls instead of bagels for a softer, sweeter version like our sausage, egg, and cheese sliders.
  • Add sauteed peppers, onions, or spinach with the eggs for a veggie boost.

Recipe Tips & Tricks

  • Cook the eggs in the sausage grease so they pick up extra savory flavor, and keep them a little soft since they finish cooking in the oven.
  • Do not overfill the sliders, one sausage patty and a layer of eggs per bagel keeps them easy to eat.
  • Brush the garlic butter generously over every top so the bagels turn golden and flavorful.
  • Use mini bagels that fit snugly in the pan so the sliders hold together.
  • Assemble the night before and refrigerate, then bake fresh in the morning.
  • Cover with foil if the tops brown too fast before the cheese fully melts.

Serving Ideas and Suggestions

Serve bagel breakfast sliders warm, straight from the pan, with a glass of orange juice and a pot of coffee. They are perfect for weekend brunch, holiday mornings, and feeding a hungry crowd with almost no fuss.

Round out the breakfast table with something sweet like our lemon blueberry coffee cake or a batch of banana nut muffins.

Because they bake in one pan and reheat well, they are great for meal prep and gatherings. For another savory bake, try our overnight breakfast casserole alongside them.

Breakfast Sliders FAQs

How do I store breakfast sliders?

Store leftover breakfast sliders in an airtight container in the refrigerator for up to 4 days. Reheat them in the microwave for about 30 seconds or in a 350 degree oven until warmed through and the cheese melts again. They make a great grab and go breakfast all week.

Can I make breakfast sliders ahead of time?

Yes, these are perfect for making ahead. Assemble the sliders completely, cover the pan tightly, and refrigerate overnight. In the morning, brush on the garlic butter and bake as directed, adding a few extra minutes since they start out cold. This makes them ideal for holidays and busy mornings.

Can I freeze breakfast sliders?

Yes, wrap cooled sliders individually and freeze for up to 2 months. Reheat them from frozen in the microwave or a 350 degree oven until hot in the center. Wrapping them individually makes it easy to grab just one or two for a quick breakfast.

What kind of sausage works best for breakfast sliders?

Pre formed breakfast sausage patties are the easiest, but you can also shape your own from bulk breakfast sausage. Use mild, sage, maple, or spicy sausage depending on your taste. Just make sure the patties are about the same size as your mini bagels.

Can I use a different bread instead of bagels?

Absolutely. Hawaiian rolls, dinner rolls, English muffins, or biscuits all work well for breakfast sliders. Everything bagels add the most flavor, but any sturdy roll that fits your pan will do the job.

How do I keep the eggs from getting rubbery?

Scramble the eggs just until barely set and still a little soft, since they will finish cooking in the oven. Overcooking them on the stove first is the main cause of rubbery eggs. Pulling them off the heat early keeps them tender in the baked sliders.

Notes

  • Keep It Warm: If you’re serving these to a crowd, place them on a baking sheet and keep them in a low oven until everyone’s ready to eat.
  • Don’t Overcook the Eggs: Scramble your eggs on medium-low heat to keep them fluffy. Overcooked eggs can turn rubbery, and nobody wants that in a delicious breakfast sliders recipe!
  • Butter Mix Up: Feel free to add a pinch of herbs to your melted butter—like oregano or basil—for a more herby taste on top of the rolls.
  • Use the Right Pan: A casserole dish helps contain the sliders so the cheese doesn’t ooze off onto your oven floor.
  • Slice the Bagels Evenly: A serrated knife works best, especially for a crisp bagel exterior. It keeps the edges from crumbling.
  • Check the Bottoms: The tops of the rolls might look golden brown, but make sure the bottom half is heated and slightly crisp too.
