How do you make Boursin Chicken?

Sear seasoned chicken breasts until golden, then set them aside and crisp the bacon in the same skillet. Add garlic and chicken stock to deglaze, then stir in a round of garlic and herb Boursin cheese until the sauce is creamy. Add fresh basil, return the chicken and bacon, and simmer the Boursin Chicken until saucy and cooked through.

Why This Recipe Works

Click to see the technique science
  • Boursin makes it creamy. A round of garlic and herb cheese melts into an instant creamy sauce packed with flavor, with no roux or heavy cream needed.
  • Bacon adds smoky depth. Crisping the bacon right in the skillet builds a savory base and adds crunch to every bite.
  • Fresh basil brightens it. Stirring in fresh basil at the end keeps the sauce fresh and fragrant to balance all that richness.
  • One skillet, easy cleanup. Everything cooks in a single pan, so dinner is on the table fast with barely any dishes.
  • Restaurant flavor at home. Seared chicken in a creamy herb sauce tastes fancy, but it comes together with a handful of simple ingredients.

  • Bacon: Crisped right in the skillet for smoky flavor and a little crunch in every bite.
  • Fresh Basil: Stirred in at the end for a bright, fragrant finish that cuts through the creamy sauce.
  • Chicken Stock and Garlic: They deglaze the pan and build a savory base for the sauce, a lot like the base in our bourbon chicken.

This Boursin Chicken is easy to make your own. Here are a few tasty twists to try.

  • Use chicken thighs: Swap in boneless thighs for an even juicier, more forgiving option.
  • Add spinach: Stir a few handfuls of fresh spinach into the sauce until wilted for extra veggies.

Recipe Tips & Tricks

  • Pat the chicken dry. Dry chicken sears into a better golden crust, so blot it with paper towels first.
  • Do not crowd the pan. Sear the chicken in batches if needed so it browns instead of steaming.
  • Save some bacon for the top. Set aside a little crispy bacon to sprinkle over at the end for texture.
  • Let the cheese melt slowly. Stir the Boursin in over low heat so the sauce stays smooth and creamy.
  • Check for doneness. Cut into the thickest chicken breast to make sure it reaches 165 degrees in the center.
  • Add basil last. Stir in the fresh basil right at the end so it stays bright green and fragrant.

Serving Ideas and Suggestions

Add a simple green salad or roasted vegetables to round out the meal. It pairs well next to our better than take out beef and broccoli for a fun dinner spread.
