Why This Recipe Works

Click to see the technique science
  • The air fryer crisps fast. Hot circulating air gives you a shatteringly flaky crust in a fraction of the time the oven takes, with no preheating a big oven.
  • Refrigerated crust keeps it simple. Store bought pie crust means no chilling dough or rolling from scratch, so these come together in minutes.
  • Egg wash plus sugar equals shine. Brushing with egg wash and sprinkling decorators sugar gives the tops that bakery golden, sparkly finish.
  • Steam slits prevent blowouts. A few small slits let the steam escape so the filling stays inside instead of bursting through the seams.
  • Perfectly portioned. Each hand pie is its own single serving treat, no slicing or plates required.

Just a few simple ingredients turn into these flaky little pies. Here is what you need.

  • Refrigerated pie crusts: The ultimate shortcut. Two crusts make about six hand pies with no dough from scratch.
  • Blueberry pie filling: Canned filling is thick, jammy, and ready to go, so there is no cooking down fresh berries.
  • Egg: Whisked with a splash of water for an egg wash that gives the pies their golden, glossy tops.
  • Decorators sugar: A sprinkle on top adds sparkle and a little sweet crunch.
  • Olive oil spray: A quick spritz in the basket keeps the pies from sticking.

Here are some easy ways to switch up these blueberry hand pies.

  • Any pie filling: Swap in cherry, apple, strawberry, or peach filling for a whole new hand pie.
  • Add a glaze: Drizzle with a simple powdered sugar glaze once cooled for an extra sweet finish.

Recipe Tips & Tricks

  • Keep the crust cold. Cold pie crust is easier to fold and crimps cleaner, so work quickly and chill it again if it gets soft.
  • Do not overfill. Two tablespoons is plenty. Too much filling and the pies leak as they cook.
  • Seal the edges well. Moisten the border and crimp firmly with a fork so the filling stays tucked inside.
  • Do not skip the slits. They vent steam so the pies stay sealed and the filling does not blow out.
  • Cook in batches. Give the pies space in the basket so the air can circulate and crisp every side.
  • Let them cool a minute. The filling is molten right out of the basket, so wait a moment before that first bite.

Blueberry Hand Pies FAQs

Can I make blueberry hand pies in the oven instead?

Yes. Bake them on a parchment lined sheet at 400 degrees for about 18 to 22 minutes until golden brown. The air fryer is faster, but the oven works great for larger batches.

Can I use homemade blueberry filling?

Absolutely. Cook fresh or frozen blueberries with sugar and a little cornstarch until thick, then cool completely before filling the pies so they are not runny.

How do I keep the filling from leaking out?

Do not overfill, leave a half inch border, seal the edges well with a wet finger and a fork, and always cut steam slits. Those steps keep the filling inside where it belongs.

Can I make blueberry hand pies ahead of time?

You can assemble them and keep them in the fridge for a few hours before air frying. Cooked pies are best the day they are made but reheat well in the air fryer.

How do I store and reheat leftover hand pies?

Store cooled pies in an airtight container at room temperature for up to 2 days or in the fridge for up to 4. Reheat in the air fryer at 350 degrees for a few minutes to crisp them back up.

Can I freeze blueberry hand pies?

Yes. Freeze them after assembling but before cooking, then air fry from frozen, adding a couple of extra minutes. You can also freeze cooked pies and reheat in the air fryer.
