Who didn’t grow up on Rice Krispies Treats? I know that was and always has been one of my all-time favorite recipes ever. We make them all the time in our household.

One of our little secrets that we have been doing is adding more marshmallows to the mix, so you have chunks of gooey marshmallows all through these bars.

With little prep time, you can make a nice big batch of these, and everyone will always gravitate to them. I feel like there is just something natural with this recipe that everyone loves.

Simple ingredients also help these come together in no time, and the hardest part is to let them set up, which we all know is absolutely worth it in the end.

WHY THIS RECIPE WORKS:

  1. Simple pantry staple ingredients help these come together easily.
  2. You can make them thinner or thicker depending on your pan.
  3. These are great for many occasions.

INGREDIENTS NEEDED (FULL RECIPE BELOW):

  • Salted butter
  • Mini marshmallows
  • Vanilla extract
  • Fine sea salt
  • Rice Krispies cereal

HOW TO MAKE A RICE KRISPIES TREATS RECIPE:

  1. Line a 10×15 inch jelly roll pan with foil and lightly spray it with cooking spray, set aside.
  2. In a dutch oven or in a large pot, melt the butter over medium-low heat. 
  3. Reserve 4 cups of the mini marshmallows on the side and add the remaining marshmallows to the pot. 
  4. Stir constantly until melted.
  5. Take off the heat. Add the vanilla extract and salt to the pot then stir to combine. 
  6. Add half of the cereal, mix it in to combine. 
  7. Add the remaining cereal and mini marshmallows, and stir until combined.
  8. Add the mixture to the prepared jelly roll pan. Then you’ll want to lightly grease your hands with cooking spray and gently press the mixture into the pan. Do not smash them down, you don’t want them too compact, just gently form to the pan.
  9. Let them set up for at least 2 hours, then cut into bars and serve.

CAN I USE LARGE MARSHMALLOWS?

You can use regular large marshmallows for this recipe if you want, you will want to use about 25 ounces of large marshmallows for this. 

8 regular large marshmallows equal roughly 1 cup of marshmallows. There are about 6 cups of mini marshmallows in a 10-ounce bag.

You can only use the large marshmallows if you do not plan on putting the extra mini marshmallows in the bars themselves, or you can add in mini marshmallows after the fact and still use large.

CAN I USE ANOTHER TYPE OF CEREAL?

This recipe is a great base to make any other type of treats that you want. Some of our favorite cereals to use include: Fruity Pebbles, Cocoa Pebbles, Reese’s Puffs, Cocoa Puffs, etc. 

You can really use any type of cereal that you want for these, you just want to make sure that you are using the same amount in cups as the recipe calls for.

HOW DO I MAKE THESE THICKER?

If you are looking for a nice and thick Rice Krispies Treats Recipe then you will want to make these in a 9×13 inch baking pan instead of a 10×15 in one.

The setting time should stay around the same, but just make sure that when cutting them, they don’t fall apart and hold together well.

HOW TO STORE:

These are best stored at room temperature, where they can be covered with plastic wrap or foil, and will keep for up to 5 days, I do not recommend refrigerating.

They can also be frozen, you can wrap each individual bar in plastic wrap and place it in a freezer bag, or you can wrap the pan in plastic wrap and then a layer of foil where they will keep for 3 months.

Defrost on the countertop until thawed and then serve.

TIPS AND TRICKS:

  • You can use a 9×13 inch pan to make these thicker if desired.
  • These can be frozen, see above on how to do that.
  • Other cereals can be used to switch up the flavor, I shared some of my favorites above.
  • These need to set up on the countertop for around 2 hours.
  • You can omit adding the extra 4 cups of marshmallows, but we highly recommend this.
  • You can also use regular large marshmallows for this, see above on how we do that.

  1. If you roll them thin, then melt butter, chocolate and some marshmallows, you can spread this over the RK layer, then roll it up like a pinwheel. Refrigerate until set, then slice them. There are never leftovers.
