Gooey No-Bake Granola Bars

Granola Bars are the chewy, no-bake snack I keep stocked for lunchboxes, hikes, and the after-school hungries, and they come together in one bowl with no oven required. I started making these on a *busy back-to-school week* when the store-bought boxes ran out, and now Maddie and Lizzie like the homemade ones better. If you love an easy treat, you will want our chewy chocolate chip cookies too.

Why This Recipe Works

Click to see the technique science
  • No oven, no fuss. Everything melts on the stovetop and sets in the fridge, so there is no baking and no heating up the kitchen.
  • One bowl, five ingredients. Peanut butter, honey, coconut oil, oats, and your mix-ins are all it takes.
  • Totally customizable. Use any nut butter and any combination of seeds, chocolate, coconut, or dried fruit to make them your own.
  • The binder holds them together. Melted peanut butter, honey, and coconut oil set up firm when chilled, so the bars stay together instead of crumbling.
  • Better than store-bought. No mystery ingredients, just real food, and they cost a fraction of the boxed kind.
  • Great for meal prep. One quick batch gives you a week of grab-and-go snacks. Cut them, wrap them individually, and you have homemade bars ready whenever hunger strikes.

A handful of pantry staples melt together into chewy, satisfying bars.

  • Peanut butter: the main binder and flavor. Any nut or seed butter works.
  • Honey: sweetens the bars and helps them hold together once chilled.
  • Coconut oil: melts smoothly into the mixture and helps it set up firm.
  • Oats: the hearty, chewy base of the bars.
  • Mix-ins: a full cup of your favorites, like sunflower seeds, chocolate chips, coconut flakes, or dried fruit.

Variations and Substitutions

These Granola Bars are a blank canvas, so make them your own.

  • Swap the peanut butter for almond, cashew, or sunflower seed butter for a nut-free version.
  • Use maple syrup or agave in place of honey.
  • Add a scoop of protein powder or ground flax for a heartier bar.
  • Mix in mini chocolate chips, dried cranberries, chopped nuts, or shredded coconut.
  • Drizzle the tops with melted chocolate for a more dessert-like treat, like our chocolate chip cookie bars.

How to Make Granola Bars

  1. In a medium saucepan over low heat, gently melt the peanut butter, honey, and coconut oil together, stirring until smooth.
  2. Remove from the heat and stir in the oats until evenly coated, then fold in a cup of your favorite mix-ins like sunflower seeds, chocolate chips, or dried fruit.
  3. Press the mixture firmly and evenly into a parchment-lined 8×8 inch dish. Pressing firmly is what keeps the bars from crumbling.
  4. Cover and refrigerate for about 2 hours, until firm, then lift out and cut into bars.

Recipe Tips & Tricks

  • Press firmly. Really pack the mixture into the dish so the bars hold together and do not crumble.
  • Line the dish with parchment so you can lift the whole slab out and cut clean bars.
  • Melt the binder gently. Low heat keeps the peanut butter and honey from scorching.
  • Chill until firm. Give them the full 2 hours in the fridge so they set up before cutting.
  • Use quick or old-fashioned oats. Old-fashioned oats give more chew; quick oats make a softer bar.
  • Store them cold. These no-bake bars are softest at room temp, so keep them in the fridge for the best texture.

Serving Ideas and Suggestions

These Granola Bars are the ultimate grab-and-go snack for lunchboxes, road trips, hikes, and busy mornings.

Pack one with a piece of fruit for an after-school snack, or crumble them over yogurt for a quick parfait, the same way we love our no churn cookie dough ice cream as a treat.

Set a plate of them out next to our chewy chocolate chip cookies and oatmeal raisin cookies for an easy snack spread the whole family will raid.

They are also a lifesaver for busy mornings. On days when there is no time to sit down, I grab a bar and a coffee on the way out the door, and the kids do the same on the way to the bus. A little planning on a Sunday means real, filling snacks all week long with zero fuss.

Granola Bars FAQs

How long do no-bake Granola Bars last?

Stored in an airtight container in the fridge, these granola bars keep for about a week. You can also freeze them for up to 3 months and thaw as needed.

Why are my Granola Bars falling apart?

Usually it means they were not pressed firmly enough or not chilled long enough. Pack the mixture down hard into the dish and give it the full 2 hours in the fridge to set.

Can I make Granola Bars without peanut butter?

Yes. Use any nut butter like almond or cashew, or sunflower seed butter for a nut-free version. The bars set up the same way.

Do Granola Bars need to be refrigerated?

These no-bake bars are softest and hold together best when kept cold, so store them in the fridge. They will soften if left out at room temperature for long.

What mix-ins are best for Granola Bars?

A cup of any combination works: sunflower seeds, chocolate chips, dried cranberries or raisins, chopped nuts, coconut flakes, or mini pretzels. Mix and match to your taste, and try to keep the total to about one cup so the bars still hold together well.

Are these Granola Bars healthy?

They are made with real, simple ingredients and no preservatives. The exact nutrition depends on your mix-ins, but you control the sugar and add-ins, which is a big step up from many boxed bars. For a lighter bar, lean on seeds and dried fruit and go easy on the chocolate chips. To make them gluten-free, simply use certified gluten-free oats, since the rest of the ingredients are naturally gluten-free.

Gooey No-Bake Granola Bars

Prep: 5 minutes
Chill Time 2 hours
Total: 2 hours 5 minutes
These chewy no-bake Granola Bars take just five ingredients and five minutes of hands-on work, customizable with chocolate, seeds, and dried fruit for the perfect grab-and-go snack.
Servings 4 servings

Ingredients

  • 1/2 c peanut butter or other nut butter
  • 1/3 c honey
  • 1/4 c coconut oil
  • 1 c oats
  • 1 c total of any combination of : sunflower seeds, chocolate chips, dried fruit, coconut flakes etc.

Instructions

  • In a medium sized sauce pan melt the peanut butter, coconut oil and honey. I used chunky peanut butter but you will want to melt them until all lumps are dissolved. *This is the step that an adult will need to at least assist a child.
  • Add oats once everything is smooth. In a medium bowl, mix in additional toppings of your choice. I used coconut flakes and sunflower seeds. This would be a good time to let your helper mix all the ingredients with their hands!
  • Once mixed, spread the granola into an 8×8 dish. My dish was 9×9 so I made sure to not fill the entire dish.
  • Cover with foil and toss in the fridge for 2 hours before cutting and serving.

  1. Yea! Not a ton of ingredients makes it easy and knowing what’s in your granola bars is even better. 🙂

  2. They couldn’t have been easier! The hardest part was waiting for them to set up in the fridge before I could cut them. 😉

  3. Those look awesome! Granola bars are so expensive, so little, and probably filled with fake stuff, making your own is an excellent idea! I will have to give it a try. Thanks for linking up to Snickerdoodle Sunday! Can’t wait to see what you have for us next week! – Kristina
