Hi guys! I have had a fun filled week so far playing with Fiona, my niece, and I really wanted to make this treat with her but time got away from us! Laura posted this granola bar recipe at Heavenly Homemakers and I knew it looked like a super yummy snack that would be a great recipe for kid chefs! My 4 year old assistant wasn’t around to help me out, but Soph filled in and rocked it!

Gooey Granola Bars

These crunchy and Gooey Granola Bars are perfect to enjoy as a snack on the go. They're easy to make and taste absolutely delicious!
Servings 4 servings

Ingredients
  

  • 1/2 c peanut butter or other nut butter
  • 1/3 c honey
  • 1/4 c coconut oil
  • 1 c oats
  • 1 c total of any combination of : sunflower seeds, chocolate chips, dried fruit, coconut flakes etc.

Instructions

  • In a medium sized sauce pan melt the peanut butter, coconut oil and honey. I used chunky peanut butter but you will want to melt them until all lumps are dissolved. *This is the step that an adult will need to at least assist a child.
  • Add oats once everything is smooth. In a medium bowl, mix in additional toppings of your choice. I used coconut flakes and sunflower seeds. This would be a good time to let your helper mix all the ingredients with their hands!
  • Once mixed, spread the granola into an 8×8 dish. My dish was 9×9 so I made sure to not fill the entire dish.
  • Cover with foil and toss in the fridge for 2 hours before cutting and serving.

pourPinI opted to use a spoon because I’d already gotten honey in Soph’s hair while trying to stop her from eating the dog’s food. I would have preferred mixing with my hands though because the coconut oil, honey and oats make for a natural hand conditioner! Once mixed, spread the granola into an 8×8 dish. My dish was 9×9 so I made sure to not fill the entire dish.

This batch will last me a while because Jeffrey hates coconut and Soph can’t quite chew granola yet…although, it won’t be long! I kind of didn’t want to share them though because they looked so good…I was right.
