If you are looking for one of the easiest and most flavorful bars around then you have to make a batch of these Blueberry Bars! Flavorful, fun, and addictive.
Blueberries are absolutely fun to bake with, I really love the flavor of them in baked goods and these Blueberry Bars are exactly one way that I love using them.
These bars are soft, sweet and filled with blueberry pie filling. A combination that I cannot resist! They are one of my favorite easy bar recipes to make and always get requested.
The store bought blueberry pie filling really makes this recipe a breeze to whip up and it is one of those recipes that we throw together in a hurry when we know we have company coming.
We always get rave reviews and requests for this recipe that it has become a staple in our house, especially when we have guests over or go to a picnic or get together.

WHY THIS RECIPE WORKS:
- Minimal pantry staple ingredients help these come together quickly.
- You can use store bought or homemade pie filling.
- They are great slightly warm or cold.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Butter
Sugar
Eggs
Vanilla extract
Almond extract, optional
Flour
Blueberry pie filling
Powdered sugar, optional
HOW TO MAKE BLUEBERRY BARS:
- Preheat the oven to 375°F. Line a 9×13 baking dish with parchment paper, set aside. In the body of a stand mixer with the paddle attachment or in a large bowl with an electric hand mixer, cream the butter and sugar together until fluffy, 2 minutes.
- Add in the eggs one at a time until fully incorporated then add in the vanilla and almond extract until combined.
- Scrape down the sides. Add the flour and stir it in until combined, there should be no dry patches. Scrape down the sides then stir a couple more times.
- Press ¾ of the dough mixture into the bottom of the baking dish.
- Add the pie filling on top and spread it out.
- Dollop the remaining batter on top of the pie filling and gently spread it out, you still want some of the pie filling to peek through.
- Bake for 40-45 minutes until golden brown on top.
- Let cool for 5 minutes in the baking dish. Lift the pie bars out and let them cool on a wire rack. Serve warm or at room temperature.
- Add a dusting of powdered sugar, optional.
These Blueberry Bars are so easy and you really cannot deny that at all! Just look at the in process images, you have minimal steps to this and the outcome is absolutely amazing.
DO I HAVE TO USE BLUEBERRY PIE FILLING?
No, unless you want these Blueberry Bars! You can use any pie filling that you like. We have used cherry, apple and peach and we love each and every one of them.
That is one thing that I love about these bars is that they are very versatile and you can use your favorite pie filling and it works perfectly with the flavor.
These Blueberry Bars are perfect for the warmer months, but I’m the type of person who can’t resist fruit desserts all year round so we make these any time of the year.
CAN I USE HOMEMADE BLUEBERRY PIE FILLING?
If you are not a fan of canned filling you can absolutely use your own homemade pie filling. You will just want it to measure out to the 21 oz that you would get from the canned.
We like to use the canned filling as it is thicker, some homemade fillings can be slightly runny so if you do use homemade I would recommend that it is a thicker filling.
Otherwise you run the risk of the bars being soggy and not cooking all the way through from the moisture of the filling itself.
HOW TO STORE:
Store these in an airtight container on the countertop for up to 4 days, or in the refrigerator for up to 1 week.
These Blueberry Bar Recipe can also be frozen, store in an airtight container for up to one 3-4 months, to defrost remove to the refrigerator overnight or covered on the countertop.
TIPS AND TRICKS:
- We use a little bit of almond extract in this recipe as we love the flavor, this is optional.
- Instead of using powdered sugar you could also make a powdered sugar glaze to top these bars.
- They can be frozen, see my tips above on that.
- Use any pie filling that you like, this works with various different flavors.
- You can also make your own homemade filling instead.
