When I was a kid I LOVED rice krispies treats. Seriously, love them!

I have to say I am not a fan of the prepackaged rice krsipy treats though. They are so easy to make and taste 100x better! I

wanted to share an extra special recipe for the last of the after school snacks serious and I just knew this would be a hit! Monster rice krispies treats, rice krispies smeared with peanut butter frosting and a rainbow of M&Ms, so yummy!

I love the flavors of monster cookies, so adding these additions to these classics treats was a no brainer!

It is so easy to get the kids involved too, you can have the rice krispies and peanut butter frosting ready for when the kids get home from school. Have them help you smear the frosting on top and add the m&m decorations! Super fun! You can also just sprinkle the m&m’s on top and they will come out just as delicious! Monster Rice Krispies Treats

You can get away with only one medium sized bag of M&ms found in the candy aisle, the brown bag. BUT, to get the rainbow effect, pick up two to make sure you have enough of all colors!

Ingredients

Rice Krispies Treats:

  • 3 Tbls butter unsalted
  • 6 Cups crispy rice Cereal
  • 4 cups mini marshmallows

Peanut Butter Frosting:

  • 1/4 Cup butter unsalted, softened
  • 1/2 Cup creamy peanut butter
  • 1 1/2 Tbls milk
  • 1/2 tsp vanilla bean paste or extract
  • 1 Cup powdered sugar
  • 1 medium sized bag of m&ms for decoration

Instructions

Rice krispies treats:

  • Melt butter in a large sauce pot over medium low heat. Add in marshmallows and let melt, stirring constantly. As soon as all the marshmallows have melted, take off the heat and add in the rice cereal. Mix and mix until all the cereal is coated. Spread mix over a sheet tray lined with parchment paper, for easy spreading spray a spatula with cooking spray or your fingers. Form into the shape you wish (try to get a flat surface), set aside, covered with plastic wrap for at least one hour to set.

Peanut Butter Frosting:

  • Cream together the butter and peanut butter with a hand mixer over medium speed. Add in the powdered sugar until combined. Add in the milk and vanilla. Whip on medium speed until light and fluffy about 3 minutes.
  • Spread over rice krispies treats in a thin even layer. For the rainbow effect, start in one corner and in alternating colors add rows and rows of m&ms.
  • Cut into bars, serve and enjoy!

I just thought the pattern looks so cool, and before cutting into bars would really make a big “wow” at a party!
