WHY THIS RECIPE WORKS:
- This uses instant rice and is ready in 15 minutes!
- You can use any type of chocolate chips you like.
- This can be doubled to serve more people.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Milk
Instant rice
Granulated sugar
Salt
Eggs
Vanilla
Chocolate chips
Unsalted butter
Ground cinnamon
Vanilla extract
HOW TO MAKE CHOCOLATE RICE PUDDING:
- Place milk, rice, sugar, and salt in a medium saucepan or skillet. Bring to a boil while stirring constantly. Lower the heat to medium-low and let simmer uncovered for 6 minutes, stirring occasionally.
- After 6 minutes, take a spoon and whisk a couple of tablespoons of the rice mixture into the beaten eggs.
- Whisk the eggs into the skillet and combine. Let cook for an additional minute to thicken.
- Take off the heat and add in the chocolate, butter, cinnamon, and vanilla.
- Whisk to combine. Let sit for 5 to 10 minutes to cool and serve, enjoy!
HOW TO THICKEN RICE PUDDING:
If your Chocolate Rice Pudding Recipe didn’t thicken as much as you would have liked, this means it was not cooked long enough.
To thicken this recipe is with cornstarch and water mixture. Mix about 1 Tbs cornstarch and 1 Tbs of water together and pour it into the pudding and stir over medium-low heat and it should thicken right up.
WHAT KIND OF CHOCOLATE IS BEST FOR THIS?
Any high-quality chocolate chips or chocolate chunks work perfectly for this recipe. We went with semi-sweet chocolate. It balances great with the sweetness of the pudding.
You can also use milk chocolate and dark chocolate if you’d like. Chocolate chunks work great and you can also use a chocolate baking bar as well, german or semi-sweet is best. I would not use bittersweet for this.
HOW TO STORE:
Chocolate Rice Pudding can be stored in an airtight container in the refrigerator where it will last up to one week.
This can also be frozen, cool your pudding and then place in a freezer container or smaller containers if you want to portion out your servings. Place in the freezer and it should keep for up to 3 months. Let defrost in the refrigerator overnight to thaw.
If you want to reheat this, it is great served chilled as well, you can place it in the microwave or in a saucepan until heated through.
TIPS AND TRICKS:
- This recipe is formulated to use instant rice so make sure you use that instead of long-grain rice.
- Use any of your favorite chocolate flavors either in chocolate chips, chocolate chunks, or baking bar.
- If this turns out too thin it can be thickened up with cornstarch and water, see my suggestions above on how to do that.
- You can add more or less cinnamon to fit your flavor profile.
- This can be frozen, see my tips above.

This was always a welcome dessert whenever we had leftover rice. Her recipe was rice, sugar to sweeten, cream if you have it otherwise milk will do and a beaten egg, don’t forget the vanilla, lol. Never any measurements. This recipe came out exactly like hers. Thank you not only for a tasty desserts but fond memories.
