Italian Subs

Italian Subs are loaded with layers of salami, ham, and pepperoni, melty provolone, and tangy pepperoncini, all tucked into a hoagie roll brushed with garlic parmesan butter and baked until hot. I make a pan of these for game day and family movie nights, and they vanish in minutes. If you love a hearty sandwich, you will also want our chicken parmesan subs in the rotation.

How do you make Italian Subs?

Stir together softened butter, parmesan, garlic powder, and Italian seasoning. Slice hoagie rolls lengthwise, brush the cut sides with the garlic butter, and toast in a 375 degree oven. Layer provolone, ham, salami, pepperoni, and pepperoncini on the rolls, add another layer of cheese, then close them up and bake in a dish until hot and the cheese melts.

Why This Recipe Works

Click to see the technique science
  • Garlic parmesan butter is the secret. Brushing the rolls with seasoned butter before toasting adds rich, savory flavor and keeps them from getting soggy.
  • Toasting the rolls first. A quick toast gives the bread a sturdy, golden base that holds up to all those juicy layers.
  • Cheese on the bottom and top. Layering provolone both above and below the meats glues everything together and melts into every bite.
  • Baking warms it all through. A few minutes in the oven melts the cheese and warms the meats so the subs taste freshly made, not cold from the deli.
  • Pepperoncini add the tang. Those briny, slightly spicy peppers cut through the richness and give the subs their classic Italian deli flavor.
  • It feeds a crowd fast. You can build a whole pan at once, making it perfect for parties, game day, or a busy family dinner.

  • Hoagie Rolls: sturdy sub rolls that can hold all the layers; toast them so they do not get soggy.
  • Italian Meats: a classic trio of tavern ham, Genoa salami, and pepperoni for that deli flavor.
  • Provolone Cheese: mild and melty, layered top and bottom to hold everything together.
  • Garlic Parmesan Butter: softened butter mixed with parmesan, garlic powder, and Italian seasoning.
  • Pepperoncini: tangy sliced peppers that brighten every bite, like the ones in our Italian grinder sandwich.

Variations and Substitutions

These subs are easy to make your own. Swap the meats and cheese for whatever your family loves.

  • Change the meats: add capicola, mortadella, or prosciutto for an even more authentic Italian combo.
  • Switch the cheese: mozzarella, provolone, or a sharp white cheddar all melt beautifully.
  • Add fresh veggies: after baking, top with shredded lettuce, tomato, and onion for crunch.
  • Make it a meatball sub: swap the deli meats for our homemade meatballs and marinara.
  • Drizzle with dressing: a splash of Italian dressing or oil and vinegar adds classic deli flavor.

Recipe Tips & Tricks

  • Toast the rolls first so they stay sturdy and do not turn soggy under all the layers.
  • Layer cheese on the bottom and top to seal in the meats and create the meltiest sub.
  • Do not skip the garlic butter; it is what makes these taste like a real Italian deli sub.
  • Cover loosely with foil if the tops brown too fast before the cheese fully melts.
  • Use deli-sliced meats piled high, the same generous hand we use for our ham and Swiss sliders.
  • Add fresh veggies after baking so lettuce and tomato stay crisp and cool against the warm subs.

Serving Ideas and Suggestions

Italian Subs are a meal on their own, but they are even better with a pile of chips and a crisp pickle on the side, just like the deli serves them.

They are perfect party food, so set them out next to our easy sheet pan pizza and a batch of homemade meatballs for a game-day spread everyone will love.

For a heartier Italian feast, serve them alongside a creamy chicken alfredo bake or a simple spaghetti aglio e olio for the pasta lovers at the table.

Italian Subs FAQs

Can I make Italian Subs ahead of time?

Yes. Assemble the subs up to the baking step, wrap them well, and refrigerate for a few hours. Bake them just before serving so the bread stays crisp and the cheese is freshly melted.

What meats go on an Italian Sub?

A classic combo is ham, Genoa salami, and pepperoni, but capicola, mortadella, and prosciutto are all delicious additions for an authentic Italian deli flavor.

Should Italian Subs be served hot or cold?

This baked version is best served warm so the cheese is melty and the meats are heated through. You can also build them and skip the bake for a classic cold sub.

How do I keep Italian Subs from getting soggy?

Toast the rolls with the garlic butter first to create a sturdy base, and add any fresh veggies like lettuce and tomato after baking rather than before.

Can I make Italian Subs for a crowd?

Absolutely. Build as many as you need in a 9×13 dish or on a sheet pan, then bake them all at once. They are a perfect make-ahead party or game-day food.

How do I store and reheat leftover Italian Subs?

Wrap leftovers tightly and refrigerate for up to two days. Reheat in a 350 degree oven, loosely covered with foil, until warmed through and the cheese melts again.
