A tasty, filling lunch or dinner meal, this Grilled Italian Sausage Sandwich is a family hit, requires minimal ingredients, and is super easy to whip up.

I love a good sandwich, that is one thing that will never get old. This Sausage Sandwich were my parent’s recipe that they would make while I was growing up.
They are one of the recipes that I still make and enjoy today. We just absolutely love them around here. From the sausage, veggies, sauce, and cheese.
Everything works so well together, and they are super filling so you don’t feel like you need a bunch just to fill yourself up.
They go great with a ton of different side dishes, so they are perfect for lunch and dinner – whenever you have the time to throw them together.
So whether you’ve got a casual meal or a more fancy feast, we’ve got you covered. It’s such an easy meal to change up, too!!

WHY THIS RECIPE WORKS:
- These are super hearty and filling.
- They are perfect for guests or a cookout.
- You can easily double this recipe.
INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):
- Green bell peppers
- Red bell peppers
- Sweet onion
- Olive oil
- Garlic powder
- Onion powder
- Dried oregano
- Kosher salt
- Black pepper
- Italian sausages
- Marinara sauce
- Hoagie rolls
- Shredded mozzarella cheese

HOW TO MAKE SAUSAGE SANDWICH:
- Preheat the oven to 375°F.
- Cut the bell peppers into ½ inch strips and place them on a large baking sheet, discard the stem and seeds.
- Remove the skin and root of the onion and slice it into ¼ inch rounds or slices. Separate the different onion layers into rings. Place them onto the baking sheet with the peppers.
- Drizzle the olive oil over the peppers and onions.
- Add the garlic powder, onion powder, oregano, salt, and pepper. Toss everything together with your hands making sure to coat all the peppers and onions with the oil and spices.
- Bake for 40-45 minutes until they are tender and slightly browned. Toss them around with a spatula every 15 minutes so they don’t burn. Set aside.
- Lower the oven temperature to 350°F.
- Grill the sausages over medium heat until they are cooked through and nicely seared on the outside. About 15 minutes, or until an internal temperature reaches 165°F. Place them on a plate until you are ready to assemble the sandwiches.
- Warm the marinara sauce in the microwave or in a saucepan on the stove.
- Place the sausages into the hoagie rolls.
- Top with some marinara, to your taste.
- Add the peppers and onions to each sandwich.
- Lastly top them with the mozzarella cheese, a little over 2 tablespoons of cheese on each sandwich.
- Bake the sandwiches for 10-15 minutes until the cheese is melted and the bread is crispy. Serve immediately with more marinara for dipping.

WHAT IS THE BEST MARINARA SAUCE TO USE?
Our favorite marinara sauce for this recipe is Rao’s and that is pretty much the only brand that we use for anything.
You can use your favorite or you can make your own homemade recipe as well.
Anything will taste great, the added sauce to these sandwiches push them over the top.
CAN I USE ANOTHER TYPE OF CHEESE?
If you don’t want to use the basic mozzarella that we use for these you can absolutely change it up.
Make sure you use freshly shredded cheese, this helps melt better.
Some of our other favorite cheeses for these include provolone, pepper jack, and white cheddar if you have another favorite, feel free to use it!

CAN I TOP THESE WITH OTHER INGREDIENTS?
Yes, these sandwiches are very forgiving and work with a lot of different vegetables, sauces, meats, etc.
Some of the other ones that we like to use include:
- Giardiniera
- Pepperoni
- Spicy mustard
- Jalapenos (pickled, fresh, or roasted)
- Pickled red onion
- Parmesan sprinkle
You just can’t beat a good sausage sandwich!
ANY OTHER ADDITIONS OR SUBSTITUTIONS?
I tell you, these sandwiches are great any night of the week.
For the best experience, make them your own!
Additions:
- Red Pepper Flakes: Sprinkle some red pepper flakes over the sausage mixture for an extra kick of flavor. It’s the best way to spice things up!
- Caramelized Onions: Swap the roasted onions for caramelized onions to add a sweet touch to your sausage sarnie.
- Sauteed Mushrooms: Add mushrooms cooked in a large skillet until golden brown for extra heartiness.
- Fried Egg: Top your sandwich with a fried egg. Because who doesn’t love a whole egg making a tasty sandwich even better?
- Cheese Variety: Try provolone or cheddar cheese instead of mozzarella for a different cheesy experience.
- Hot Sauce: Drizzle some hot sauce or brown sauce for an extra kick of flavor.

HOW TO STORE:
These Italian sausage sandwiches can be stored in an airtight container where they will keep for up to 3 days, I do not recommend freezing.
To reheat, you can do this in the microwave or oven.
If you are doing it in the oven, I would wrap it in foil so the bread doesn’t get harder.
