I love a hearty meal, most of the time I’m a meat and potatoes kind of gal. BUT, I also love an easy meal and today’s recipe for Hamburger Dinner Foil Packets checks both boxes, easy and hearty!
Hobo dinner packets have been around for ages. My Mom used to make these for us when growing up all the time and it was always one of my favorite meals she made.
There is something so comforting about these meals all enclosed in a single foil pouch. It’s not only a delicious meal but fun to eat.
I don’t know why but having my own dinner in a little pack was one of my favorite things. So, I guess you can tell this is kind of a nostalgic recipe for me.
I’ve been waiting to post this recipe for a while now and I’m so glad I get to share it with you.
The best part about this recipe is it can be made in the oven, on a campfire, on a gas or charcoal grill, or even on a smoker. So, really no matter if you are camping out or eating them at home, you can enjoy them in a variety of cooking ways.

INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):
- Lean ground beef
- Dried onion soup mix
- Baby gold potatoes
- Frozen crinkle-cut carrots
- Red onion
- Olive oil
- Garlic powder
- Kosher salt
- Black pepper
- Smoked paprika
- Colby jack cheese
HOW TO MAKE HAMBURGER DINNER FOIL PACKETS:
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the lean ground beef and dried onion soup mix.
- Separate the meat mixture into six portions of equal size, do your best. Shape them into hamburger patties and set them aside.
- In another large bowl, add the cut baby gold potatoes, frozen carrots, red onion, olive oil, garlic powder, salt, pepper, and smoked paprika. Stir everything well to combine making sure the veggies are coated.
- Lay a 12×18 (or similar-sized) piece of heavy duty aluminum foil on the counter. Spray the foil with cooking spray.
- Place ⅙ of the veggies in the middle of the foil. Add a hamburger patty on top of the veggies. Close the foil around the ingredients to form a little pouch.
- Place the foil packet dinners on baking sheets, and bake for about 45 minutes. The veggies should be tender and the burger patties reach at least 160°F. Oven cooking time may vary, so use a meat thermometer to check.
- Very carefully, open the foil packs. Place a slice of Colby jack cheese on top of the burger. Again, loosely cover with foil and allow to steam until cheese is melty about 5 minutes. Serve as-is or with your favorite sauce.

CAN I COOK THESE OVER A CAMPFIRE?
Absolutely, here are the steps for open fire cooking:
Place the foil packet meals on hot coals from a campfire and cook for 20-30 minutes.
Be advised that it may take longer if the coals are not super hot.
They are ready when the burger reaches 160°F, and the veggies are tender. Open the packets carefully, add the slice of cheese and allow it to melt before serving.
CAN I COOK THESE ON A GRILL?
You can use a propane or charcoal grill for this. Here are the steps to do so:
Preheat the grill to 400°F over medium heat.
Place the hobo dinners on the grill and cook for 30-40 minutes.
Again, they are ready when the burger reaches 160°F and the vegetables are tender. After opening the packets, add the cheese on top of the burgers and melt, and serve with your favorite sauce.
CAN I COOK THESE ON A SMOKER?
This is my personal favorite way! Here is how to cook on a smoker:
Preheat the smoker to 400°F.
Add the hobo dinner foil packets to the smoker.
Close the lid and cook for 30-40 minutes; they are ready when the burger reaches 160°F, and the veggies are fork tender.
Open the foil packets, add the cheese, and let it melt. Serve immediately with your favorite sauces.
CAN THEY BE MADE AHEAD?
Yes, these are perfect to make ahead for a camping trip or just because!
You can make up the hobo foil packets and then place them in the fridge, ready to use the next day!
CAN I ADD A SAUCE?
I love a good sauce with these, my favorites are:
- Ketchup
- Barbecue sauce
- A1 or other steak sauce
- Spicy mustard
- Spicy mayo
WHAT SUBSTITUTIONS CAN I MAKE?
In place of the ground beef patties, you can use:
- Ground turkey
- Ground chicken
- Ground pork
You can also make foil packets with other cuts of protein such as pork chops, chicken breast, or even sausage foil packets. But, we are focusing on juicy burgers for this version!
Other veggies:
- Sweet potatoes – cut into bite-sized pieces
- Green beans
- Baby carrots
- Bell peppers of any color
- Mushrooms
- Zucchini
- Summer squash
HOW TO STORE:
Store leftovers in an airtight container in the fridge for up to 3 days. Best served and eaten hot.
Reheat leftovers in the oven or microwave until warm. Do not microwave with the foil.
Freeze for up to 3 months.
Place leftovers in the freezer in a freezer-safe container. To thaw, place the dish in the fridge overnight.
