Cheesecake brownies have been one of my favorite recipes for a long time now. I wanted to make a batch, but since Halloween is coming up I thought I’d mix it up and play with the cheesecake filling!
We decided that it would be fun to shape the cheesecake filling into ghost shapes! And oh boy, they are so fun and everyone loves them. They are really the perfect Halloween treat.
I made this batch of chewy brownies using a boxed mix. I used a fudge brownie mix to make sure these were nice and dense, just like I like my brownies.
You can feel free to use any brownie mix that you like, or even use a homemade brownie recipe that you love! Either way, these Ghost Cheesecake Brownies will be fun and tasty.
We have been making these for many years and they have become one of those recipes that we always make around Halloween or bring to any parties that we have.
Since they are so easy to whip up, they are the perfect recipe that can be made on the fly with minimal effort needed! That is what I like about these the most, easy and minimal effort!
Especially when you want to make something quick, but yet fun for kids and adults alike. If that is what you’re looking for then this is the recipe for you.

WHY THIS RECIPE WORKS:
- With minimal ingredients, these come together quickly.
- They are a great fun recipe to bring to Halloween gatherings.
- They are chewy, tasty, and flavorful with the mixture of brownie and cheesecake.
INGREDIENTS NEEDED (FULL RECIPE BELOW):
Fudge brownie mix
Eggs
Water
Unsalted butter
Cream cheese
Vanilla extract
All-purpose flour
Granulated sugar
Mini chocolate chips
Chocolate chips
HOW TO MAKE GHOST CHEESECAKE BROWNIES:
Brownies:

Preheat oven to 350 degrees. Grease a 9×13 inch baking pan, set aside.

Mix the brownie mix, eggs, water, and melted butter in a large bowl. Stir by hand or with a hand mixer until combined and there are no dry patches. Set aside.
Cheesecake Batter:

Place everything in a large bowl. With a hand mixer, mix everything until smooth. Set aside.
Brownie Assembly:

Pour half of the brownie batter in the baking pan, smooth out evenly. Pour 2/3 of the cheesecake batter on top, smooth out evenly. Lastly pour out and smooth remaining brownie batter on top.

Dollop cheesecake batter all over. Using a knife or toothpick, run through the dollops and form ghosts.

Bake for 25-27 minutes until a toothpick inserted into the center comes out mostly clean. Place on a wire rack and cool completely.

Once cool, place mini chocolate chips as the eyes and regular chocolate chips as the mouths, press in with a toothpick.
HOW DO I MAKE REGULAR CHEESECAKE BROWNIES?
Of course, you don’t have to make these into ghosts. To make traditional cheesecake brownies, just swirl the cheesecake mixture into the brownie batter in figure 8’s with a knife or toothpick.
Bake as directed and you will have regular Cheesecake Brownies instead of the ghost shapes, although the ghosts are super fun if you want to use this recipe for other occasions this will work fine.
ALTERNATIVE TOPPINGS AND MIX-INS:
- Mix crushed up Oreos into the cheesecake batter, then swirl! Oreo Cheesecake Brownies, WOAH!
- Add dollops of salted caramel along with the cheesecake batter and swirl everything together.
- Sundaes, sliced cheesecake brownie topped with ice cream, hot fudge, and more.
- Trifle, sliced brownies, pudding, whipped cream.
There is so much you can do with these brownies other than just using them as they are! Have fun with them, you can even color your cheesecake batter as well.
HOW TO STORE:
Since this recipe contains cream cheese it needs to be kept in the refrigerator you can store for up to 3-4 days when wrapped in plastic wrap or in an airtight container.
These can also be frozen! We like to individually wrap our cut brownies then place them in a freezer bag, they should last frozen for about 3-4 months.
To reheat just let thaw in the refrigerator overnight, if you want them a little warm when serving you can place them in the microwave for a few seconds.
TIPS AND TRICKS:
- Make sure your cream cheese is at room temperature, this will ensure that you will get all the lumps out.
- You can make your own homemade brownie batter if you’d like.
- Do not place the chocolate chips on until the brownies are cooled or they will melt.
- These can be frozen, see my tips above on how to do that.
- If you don’t want to make ghosts, simply swirl your cheesecake mixture around, this is perfect for any occasion.
- Color your cheesecake mixture with food coloring to give it some extra flair.
