Welcome back Shannon with her recipe for cheddar and spinach quiche! Hello! It’s Shannon from Cozy Country Living! If you’ve got children getting ready to head back to school, then you know how busy this time of year can be. The Back to School shopping, supply lists and transitioning from Summer to Fall can be trying. My children go back to school in a few weeks and I am trying my best to be prepared and organized for our new schedules.
Easy Cheddar and Spinach Quiche

One of the things I really like to do is meal plan. Sure, things will come up, or practices run late, but if I have some really good, simple and quick meal ideas on my menu, then those hectic evenings tend to go much smoother and I won’t be caught in the “I don’t know what to make for dinner tonight” scenario. Have you been there?
This Easy Cheddar & Spinach Quiche is one of my favorite quick meals to make. It can be served for breakfast, lunch or dinner and takes only a few minutes to prepare. It uses ingredients you probably already have on hand (no running to the grocery store) and can quickly be assembled. Chopped spinach is blended with eggs and Sharp Cheddar Cheese then baked in a pie crust for a tasty and filling meal that can be on your table in a little over 30 minutes. The buttery, flaky crust is delicious with the savory filling. I love to serve this with fresh fruit or even a salad.
If you’re afraid that your children might not like this because of the vegetable appearance this has, rest assured that this is very kid friendly! I have picky little eaters at my house and all 4 of my children gobbled this up! To be honest, I was quite surprised that there were absolutely no complaints about the “greeny” look of it!
If you’ve got an extra handful of veggies from your garden, you might want to add that into this quiche too. The best part about this recipe is that it is very versatile. The next time you are looking for a quick dinner, I hope you give this tasty recipe a try!

I love your comment “I have picky little eaters…” As soon as I saw this on the Thursdays Favorite Things Blog Hop I immediately thought how my adult child and a picky eater (Husband) would love this! I am always looking for new meals with his limited list of food choices. If he isn’t allergic to it, most likely he hates it. Thanks for sharing!
