If you’ve got children getting ready to head back to school, then you know how busy this time of year can be. The Back to School shopping, supply lists and transitioning from Summer to Fall can be trying. My children go back to school in a few weeks and I am trying my best to be prepared and organized for our new schedules.

One of the things I really like to do is meal plan. Sure, things will come up, or practices run late, but if I have some really good, simple and quick meal ideas on my menu, then those hectic evenings tend to go much smoother and I won’t be caught in the “I don’t know what to make for dinner tonight” scenario. This Easy Cheddar & Spinach Quiche is one of my favorite quick meals to make. It can be served for breakfast, lunch or dinner and takes only a few minutes to prepare. It uses ingredients you probably already have on hand (no running to the grocery store) and can quickly be assembled. Chopped spinach is blended with eggs and Sharp Cheddar Cheese then baked in a pie crust for a tasty and filling meal that can be on your table in a little over 30 minutes. The buttery, flaky crust is delicious with the savory filling. I love to serve this with fresh fruit or even a salad.

If you’re afraid that your children might not like this because of the vegetable appearance this has, rest assured that this is very kid friendly! I have picky little eaters at my house and all 4 of my children gobbled this up! To be honest, I was quite surprised that there were absolutely no complaints about the “greeny” look of it!

Cheddar and Spinach Quiche

Cook: 25 minutes
Total: 30 minutes
This easy Cheddar and Spinach Quiche is perfect to enjoy as a light meal or a side.
Servings 4 servings

Ingredients
  

Instructions

  • Pre heat your oven to 375 degrees.
  • Place your pie crust into a 9 inch or 8 inch pie plate and crimp the edges.
  • Saute the onion and garlic in a Tbsp. of butter just until softened.
  • Combine all the filling ingredients in a large mixing bowl.
  • Pour the filling into the crust.
  • Bake for 32 to 35 minutes or until the center is set.
  • You can check the middle with the tip of a knife.
  • Remove from the oven and let cool 5 minutes before serving.

I love your comment “I have picky little eaters…” As soon as I saw this on the Thursdays Favorite Things Blog Hop I immediately thought how my adult child and a picky eater (Husband) would love this! I am always looking for new meals with his limited list of food choices. If he isn’t allergic to it, most likely he hates it. Thanks for sharing!
