A few nights a go I had a hankering for some really good nachos. So, I brought it up with the Hubs and he agreed, especially since Florida was playing in one of those March Madness games…ahem. Here ya have it, my ultimate game day nachos! I heard there was a couple more of those games tonight, would be a perfect fit!
Now for these nachos there are quite a few steps. So, I will break down each recipe separately.
Sriracha-Lime Sour Cream
Ingredients
1/4 Cup Sour Cream
2 tsp Half & Half
1 tsp Sriracha
1/2 Lime Zest and Juice
1 each Scallion, green part only, sliced thin
1 Tbls Cilantro, chopped
Directions
Mix all ingredients in a bowl, cover with plastic wrap and let sit in the fridge until the nachos are finished.
Meat & Bean Mixture
Ingredients
1 lbs Ground Beef, I use ground chuck
1 Can Pinto Beans, whole
1 each Taco Seasoning Pack
1 tsp Each: onion powder, garlic powder, cumin, paprika
1 Cup Water
Directions
Get skillet hot over medium high heat. Add ground beef and cook through, drain fat. Open can of pinto beans and drain liquid. Rinse beans in colander in water. Mash beans with back of fork until they are just broken up.
Add beans to meat over medium heat. Add all seasoning to pan and mix with meat and beans. Add water and cook to the instructions on the back of the taco seasoning pack. Keep over very low heat until ready to assemble nachos.
Cheese Sauce
Ingredients
1/4 Cup Butter
1/4 Cup Flour
1/2 t Salt
1/2 tsp Each, paprika, onion powder, garlic powder, cumin
2 Cups Milk
1 Cup Cheese, I used four cheese Mexican blend
Directions
Melt butter over medium low heat. Add flour and seasonings and whisk making sure there are no lumps. Add milk and cook until thickened. Turn off the heat and add the cheese.
Nacho Assembly
Ingredients
1 bag Tortilla Chips
Beef and Bean Mixture
Cheese Sauce
Sriracha-Lime Sour Cream
1 Cup Tomatoes, chopped
3 each Scallions, thinly sliced green and white part
1/2 Cup Cilantro, chopped
Directions
Preheat oven to 350 degrees. On cookie sheet place a single layer of tortilla chips. Top with half of the beef and bean mixture. Top with half of the cheese sauce, using a spoon to distribute. Add another layer of tortilla chips. Top with remaining meat mixture and cheese sauce. Place in oven for 5 minutes to let chips heat through. Top with dollops of sour cream sauce all over then sprinkle with the remaining ingredients. ENJOY!
Since Hubs can’t eat spicy food I used mild taco seasoning and he just got plain sour cream on his side. I think the below picture will sum up how we felt about this dish.

Sriracha is THE best hot sauce. It’s not just hot it has actual good flavor with a hint of garlic. Yummy!
