We are big pork chop lovers around here. They are such an easy meat to whip up in so many different ways. We love this grilled pork chop marinade the best.
We have made them so many different ways over the years but I just can’t get over the flavor of this marinade. I absolutely love marinading meats, and this right here is it for the best pork chop marinade!
This is literally my favorite marinade for pork and chicken, it works very well with both so we use it all the time when we are grilling either of those meats.
I’m also a big lover of bone-in pork chops as well so that is what cut we usually use for this Grilled Pork Chop Recipe, it certainly will work with other cuts, but this is what we are using today.
You really can’t go wrong with a perfectly grilled pork chop that has been marinated to perfection. It is tender, juicy and absolutely delicious and you can serve it with any of your favorite sides.
With minimal time, effort, and ingredients you can have these delicious chops on the table any night of the week. Let’s get into making this epic grilled pork chop marinade!

INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):
- Bone in pork chops
- Pesto
- Olive oil
- Garlic
- Apple cider vinegar
- Honey
- Whole grain mustard
- Kosher salt
- Black Pepper
- Parsley for garnish, optional
HOW TO MAKE GRILLED PORK CHOP MARINADE:
- Place pork chops in a plastic bag and set aside.
- In a small bowl mix the pesto, olive oil, garlic, vinegar, honey, mustard, salt, and pepper together.
- Pour the marinade over the pork chops and make sure they are coated in the marinade. Seal the bag and place it in the fridge to marinate for at least 2 hours up to overnight, turning the bag over every few hours, if possible.
- Take the pork chops out of the marinade and set them on a plate. Place the remaining marinade in a small saucepan or skillet and bring it to a simmer over medium heat, immediately remove the pan and set aside.
- Preheat the grill to medium heat and oil the grates.
- Grill the pork chops until just cooked through and a thermometer inserted in the thickest part of the chop reads at least 145°F (we prefer 160°F).
- Flip the chops about halfway through, try not to move them too much so they get a good sear. Brush the chops a couple of times with the leftover marinade within the first 5 minutes of grilling, then discard any remaining marinade.
- Serve immediately with parsley garnish, optional, and desired sides.

AT WHAT TEMPERATURE ARE PORK CHOPS DONE?
Pork is safe to eat once you insert an instant-read thermometer and it reads 145 degrees F. This is the safest temperature that you will want to eat pork at.
Having a good meat thermometer on hand is a great addition to your kitchen gadgets, especially if you eat a lot of meat. They are relatively cheap and you will get your use out of them!
They are the best way to ensure your meat is cooked properly.
HOW DO I GRILL?
This can either be grilled on a regular grill or on your stove top on a grill pan. We make them both ways depending on the weather and such.
You will want to set both of these on medium setting so they can cook evenly, personally I like to use a regular grill but sometimes options are limited.
Once your internal temperature reaches that 145 degrees F you are good to go!
ANY ADDITIONS?
Here are a couple ideas to add to this good marinade:
- Add a pinch of cayenne or chipotle powder for a little heat
- Add some fresh herbs like thyme, parsley, or basil
- Worcestershire sauce or soy sauce for a more savory note
- Extra seasonings like onion powder, garlic powder, red pepper flakes
ANY SUBSTITUTIONS?
Absolutely!
- Use your favorite cut of pork that can be grilled such as pork tenderloin.
- Boneless chops, thick cut pork chops, bone-in chops will all work!
- Use brown sugar, maple syrup, or granulated sugar in place of honey
- White vinegar or balsamic vinegar in place of apple cider vinegar
- Dijon mustard or spicy brown mustard in place of whole grain
- Lemon juice in place of some of the vinegar
HOW TO STORE:
These flavorful pork chops can be stored in an airtight container and kept in the refrigerator where they will be good for up to 3-4 days.
To reheat these, we like to preheat our oven to 350 degrees and place them in a oven safe pan with a little bit of water (1-2 Tbs). We then cover with foil and bake for about 10-15 minutes until heated through.
DANA’S TIPS AND TRICKS:
- You can also use dried Italian seasoning in place of the pesto, 1 tablespoon will be enough.
- This can also be made on the stovetop using a grill pan.
- You can use this pork marinade on chicken as well!
