Before you know it, it will be the first day of Fall and then on comes the holiday crunch, wow I can’t believe we are here already!! I’m going to hold on to summer a little longer with today’s recipe! I love berries anyway you will give them to me but one of my favorite desserts is a strawberry shortcake. Now, I’ve seen strawberry shortcakes many ways before and believe me they all look delicious! I wanted to make one that was a little different and handheld! How fun! Perfect for an after school snack, if I do say so myself!

Handheld Strawberry Shortcakes
The best part is these are super easy and even kids can help make them with you in the kitchen!
Taking a classic twinkie, cutting them in half and piling high fresh strawberries and cream, pouring a vanilla candy coating over the whole thing and bam! Great as an after school snack or for a fun picnic!
Handheld Strawberry Shortcakes
Ingredients
Strawberry syrup:
- 5 strawberries large chop stew removed
- 2/3 Cup water
- 3 Tbls granulated sugar
Shortcake Assembly:
- 1 box Twinkies
- 5 strawberries sliced
- 1/2 tsp vanilla extract or paste
- 4 oz whipped topping
- vanilla candiquick
- sprinkles optional
Instructions
- Make the strawberry syrup first by placing all the ingredients in a sauce pot over medium heat. Let simmer for 10 minutes, take off the heat and strain through a fine mesh colander, gently crushing the berries to get all the juice out. Set aside.
- Slice the remaining strawberries and place in a bowl, add in the whipped topping and vanilla, mix to combine.
- Slice the twinkies down the middle length wise. Gently brush each side with the strawberry syrup. Place a generous amount of the whipped topping/strawberry mixture on the bottom twinkie half. Top with the other half of the twinkie and try and clean around the edges any excess whipped topping and try to make sure the strawberry slices aren't poking out the side.
- Place these in the freezer for about 20 minutes to set up.
- On a wired rack, using a spoon ladle the melted candiquick over each shortcake then place on a sheet tray that is covered in parchment paper or a silicone mat. Top with sprinkles if desired. Let candiquick set about 10 minutes or place in the refrigerator to set up faster. Serve and enjoy!

Ugh these are so good, a little messy I have to admit but it’s worth it! You have that crisp candy shell, soft cake and creamy strawberry filling. Yes!
What is your favorite way to eat strawberry shortcake?? I hope you enjoyed this recipe and will hold on to summer a little longer with me!
