When I’m busy or in a hurry, I love quick and easy meals, I mean, who doesn’t? This Chicken with Mushrooms is tasty, filling, and is overall just a great combination.
The flavors from the garlic and thyme mixed together with the chicken, mushrooms, and onions really work so well together. This is great served alone or over mashed potatoes or pasta.
Chicken is one of my go-to recipes as we always have it on hand, and with minimal ingredients that are easy to find, this meal really is a breeze to put together.
It has been one of my most made fast meals in the last year and one that we don’t get sick of. We could make it over and over and still love every aspect of it.

INGREDIENTS NEEDED (FULL RECIPE BELOW):
Chicken breasts
Sea salt
Pepper
Olive oil
Onions
Garlic
Thyme sprigs
Butter
Mushrooms
HOW TO MAKE CHICKEN WITH MUSHROOMS:
- Season chicken breast with salt and pepper.
- Heat a large pan with olive oil. Cook chicken on both sides until nicely brown and cooked through. Remove from the pan and set aside on a plate. Keep them warm.
- In the pan juices, cook onion until translucent then add garlic and thyme.
- Now add mushrooms and cook until softened.
- Add chicken breast back in the pan with the mushrooms and cook for about 1 minute.
- Remove from heat and serve with mashed potatoes or pasta.
WHAT KIND OF MUSHROOMS SHOULD I USE?
I am using cremini mushrooms. Feel free to use white button or portobello mushrooms. Or a mix of all, any mushrooms would work really well in this dish.
DO I HAVE TO USE CHICKEN BREASTS?
No, but they are the preferred cut of choice for this recipe. You can also use chicken thighs or drumsticks for this recipe.
WHAT OTHER SPICES WILL WORK IN THIS RECIPE?
While we adore the spices that are in here, they are minimal, yet they work really well together you can also add: fresh rosemary, tarragon, or sage.
HOW TO STORE:
This can be stored in the refrigerator in an airtight container where it will keep for up to 3 days.
You can also freeze this, place cooled chicken in a freezer container and it will keep for up to 1 month.
To defrost, remove from freezer and place in the refrigerator overnight until thawed. Reheat in pan or microwave.
TIPS AND TRICKS:
- Make sure your chicken is cooked through to 165 degrees F, use an internal thermometer for this.
