Cake Truffles (3 Ingredient Birthday Cake Truffles)

Cake Truffles take cream filled snack cakes, blitz them into fudgy golden centers, and wrap them in a crisp vanilla candy shell showered with rainbow sprinkles, and the batch I rolled for Lizzie’s birthday weekend was down to crumbs before the candles were even lit. If you already love my no bake Oreo balls, these are their confetti covered birthday cousins.

Quick Answer

How do you make cake truffles without baking a cake?

Pulse cream filled snack cakes, five at a time, in a food processor until they turn into fine, fudgy crumbs. Scoop tablespoon portions, roll them into balls, and freeze for at least 30 minutes. Melt vanilla candy coating according to the package, dip each chilled ball, and lift it out with a fork, tapping off the excess. Slide the truffles onto parchment and garnish immediately with sprinkles so they stick before the coating sets.

Why This Recipe Works

Click to see the technique science
  • Snack cakes are cake and frosting in one. The sponge and cream filling blend into a perfectly moist truffle center, exactly what bakeries make from scratch with cake and buttercream.
  • The freezer makes dipping foolproof. Thirty minutes of chilling firms the balls so they hold together in warm coating instead of dissolving into crumbs.
  • Candy coating snaps and sets fast. Vanilla candy coating is made for dipping, it hardens into a crisp shell in minutes without any tempering drama.
  • The fork and tap is the pro move. Lifting each truffle on fork tines and tapping off the excess gives you a thin, even shell instead of a puddle footed blob.
  • Sprinkles go on immediately. The coating sets quickly, so garnishing each truffle right after dipping is the difference between stuck sprinkles and bouncing sprinkles.
  • One tablespoon is the right size. A level scoop makes two bite truffles that coat evenly, look uniform in a gift box, and stretch one batch to sixteen.

Why You’ll Love This Recipe

  • Three ingredients and no oven, this is the easiest fancy looking treat you will ever make.
  • The sprinkle covered shell hides a soft, fudgy birthday cake center that gets audible reactions.
  • They disappear from a dessert table as fast as my marshmallow dip.

Key Ingredients

Three ingredients, and one of them is sprinkles.

  • Cream Filled Snack Cakes: The center. Ten golden sponge cakes with their cream filling blitz into a moist, fudgy truffle base, no cake mix, no frosting tub.
  • Vanilla Candy Coating: The shell. Melting candy wafers or almond bark set into that crisp, snappy white shell that makes these look professional.
  • Sprinkles: The party. Rainbow nonpareils are the birthday classic, but any sprinkle in the drawer works, match them to the holiday.

Variations and Substitutions

One truffle formula, a whole calendar of costumes.

  • Chocolate shell: Dip in melted chocolate candy coating instead of vanilla for a tuxedo version.
  • Holiday colors: Red and green sprinkles for Christmas, pastels for Easter, orange and black for Halloween, same truffle, new outfit.
  • Cake pop style: Push a lollipop stick into each ball before freezing and dip them as pops for the full bakery display.
  • Drizzle finish: Skip the sprinkles and drizzle with melted chocolate in thin zigzags for a fancier candy box look.
  • Lemon raspberry: For a fruity spin on the same idea, my lemon raspberry cake balls are the springtime version.

Recipe Tips & Tricks

  • Freeze, do not skip it. Room temperature balls fall apart in warm coating, the 30 minute chill is what holds the whole operation together.
  • Melt the coating low and slow. Overheated candy coating turns thick and gloopy, gentle heat keeps it thin enough for a delicate shell.
  • Work in small batches from the freezer. Pull out five balls at a time and keep the rest cold so none of them soften in line.
  • Thin stubborn coating with coconut oil. A half teaspoon stirred in loosens thick coating for smoother, drip free dipping.
  • Use a skewer to dismount the fork. Nudging each truffle off with a toothpick or skewer keeps fingerprints out of the wet shell.
  • Sprinkle over a second bowl. Catch the bouncing nonpareils and pour them back in the jar, your kitchen floor will thank you.

Cake Truffles FAQs

How do you store cake truffles?

Store cake truffles in an airtight container in the refrigerator for up to a week, with parchment between layers so the shells do not scuff. The candy coating seals in the moisture, so the centers stay soft and fudgy the whole time. They are best served cool or at room temperature, give refrigerated truffles about 10 minutes on the counter and the centers soften into perfect fudgy territory.

Can I freeze cake truffles?

Yes, cake truffles freeze impressively well for up to 2 months. Freeze the finished, fully set truffles in a single layer first, then move them into a freezer bag or container with parchment between layers. Thaw them overnight in the refrigerator, still covered, so any condensation lands on the container instead of the candy shells. That keeps the coating glossy instead of sweaty and spotted.

What are cake truffles made of?

Traditional bakery cake truffles blend crumbled cake with frosting until fudgy, then dip the balls in a candy shell. This version shortcuts the whole first half, cream filled snack cakes already contain the cake and the cream, so ten of them pulsed in a food processor produce the exact same fudgy center in seconds. Add vanilla candy coating and sprinkles and the entire ingredient list is done at three items.

Why are my cake truffles cracking after dipping?

Cracked shells happen when the temperature gap between the center and the coating is too extreme. If the balls are rock hard frozen and the coating is very hot, the shell sets while the center expands as it warms, and the shell splits. The fix is easy, let the balls sit at room temperature for 5 minutes before dipping and keep the coating just barely melted. A crack is still delicious, drizzle over it and nobody knows.

Can I make cake truffles with real cake instead of snack cakes?

Absolutely, the classic method works here too. Crumble about 3 cups of baked, cooled cake and mix it with 3 to 4 tablespoons of frosting until it holds together when squeezed, then roll, freeze, and dip exactly as written. It is a great way to use leftover cake or a box mix. The snack cake version simply saves you the baking day, which is why it is my thirty minute default.

What is the difference between cake truffles and cake pops?

Same candy, different presentation. Cake truffles are the stickless version, rolled centers dipped in coating and served like bonbons in liners or on a tray. Cake pops are identical but pressed onto lollipop sticks before dipping and displayed standing up. Truffles are honestly easier, no stick alignment, no standing them upright while they set, and they pack into gift boxes without a single casualty.

My head is spinning with possibilities! How about red, white, and blue for the 4th, green and red for Christmas, etc. Use candy pearls for bridal events. Color the frosting black and use orange and yellow sprinkles for Halloween. The possibilities are endless! Thanks for the idea!
