I don’t know about you but I love food in handheld form, always have, always will. A little personalized treat just for me, and when it is easy to throw together it’s even better!

Ever since I was little I have loved English muffins, something about them is just warm and comforting and reminds me of my childhood.

From the chicken to the cheese, bbq sauce, and caramelized red onion, these are just Heavenly, but to top them off with fresh cilantro give these pizzas a little fresh pop, irresistible.

They’re an easy way to get your daily values of YUM!! Jeremy tells me they’re one of his favorite things to take to work with him now.

In the end, you can stick with my recipe, or pick your own toppings. Keep in mind that this can be a fun activity for the kids, too. Yeah, even the older kids!

HOW TO MAKE ENGLISH MUFFIN PIZZA:

  1. Preheat the oven to 350°F. In a small saute pan over medium-low heat, saute the red onion in the olive oil with the salt until slightly browned, stirring occasionally, about 8-10 minutes.
  2. Toss the shredded chicken in the bbq sauce in a small bowl, set aside.
  3. Place the English muffins on a baking sheet, cut side up. Top the muffins with bbq chicken, onions, and cheese. Bake for 5-8 minutes until heated through and the cheese is melted. Top with the cilantro to serve.
