Irresistible Banana Blondies bake up soft and chewy, then smeared with the most luscious cream cheese frosting. A simple, crowd-pleasing dessert.

When I came up with the idea for these Banana Blondies, I had no idea how good they would actually be. I knew topping them off with cream cheese frosting would take them over the top, and I was right!

I get asked for this recipe over and over, especially since I love to bring them to family functions and showing off my recipe skills…wink wink.

These blondies are no exception, and they are an unexpected but welcomed dessert for any spread. But, easy and good enough to make any time.

I always get asked to make these, and I always do since I love them. I mean, what’s not to love?

As you can tell, we cannot get enough of these Banana Blondies, and once you try our recipe, you’ll see why!

WHY THIS RECIPE WORKS:

  • An unexpected but crowd-pleasing dessert makes this a knock-out recipe
  • It also includes a cream cheese frosting to go on top.
  • Easy to make with simple ingredients.

INGREDIENTS NEEDED (FULL RECIPE BELOW):

  • All-purpose flour
  • Baking powder
  • Fine sea salt
  • Unsalted butter
  • Light brown sugar
  • Mashed bananas
  • Egg
  • Vanilla Extract
  • Cream Cheese
  • Powdered Sugar

HOW TO MAKE BANANA BLONDIES: 

  1. Preheat the oven to 350°F. Line a 9×13 baking dish with parchment paper, and set it aside.
  2. In a medium-sized bowl, stir together the flour, baking powder, and salt, and set aside.
  3. Place the melted butter into a large bowl. Add the brown sugar, mashed banana, egg, and vanilla, and whisk everything until smooth and combined. 
  4. Add the flour mixture to the bowl with the wet ingredients and stir until combined with no dry patches.
  5. Spread the batter evenly into the prepared baking dish. Bake for 30-35 minutes until the edges are golden brown and a toothpick inserted into the center comes out clean. A few crumbs left on the toothpick are okay, but if there is any wet batter, it needs to bake longer.
  6. Place the baked blondies on a wire rack to cool completely.
  7. While the blondies are cooling, make the frosting. Place the cream cheese and butter into a large bowl, and whip it until smooth with an electric hand mixer. You can also do this in the body of a stand mixer with the paddle attachment.
  8. Add the powdered sugar a little at a time until combined, and scrape down the sides as needed. Add the vanilla, then turn the mixer to medium speed, and whip it for 3 minutes, this will make the frosting light and fluffy.
  9. Lift the blondies out of the baking dish using the parchment paper to help. Smooth the cream cheese frosting on top and cut it into bars, serve immediately.

CAN I FROST THESE WITH SOMETHING ELSE?

Yes, vanilla buttercream, chocolate buttercream, or even peanut butter frosting would be amazing on top of these blondies.

You can even add a dusting of powdered sugar or a drizzle of melted chocolate on top. They are even good plain!

CAN I ADD ANY ADDITIONS?

Yes, chopped nuts such as pecans or walnuts would be amazing.

Chocolate chips of any kind would work as well. For a fun twist, try ground cinnamon, chips, or peanut butter chips.

HOW MANY BANANAS WILL I NEED?

You need 3/4 cup of mashed bananas for this recipe. One large banana or two medium bananas are usually enough for this recipe.

I suggest making sure the bananas are extra ripe, like you would use in banana bread.

HOW TO STORE: 

Since this recipe is frosted with cream cheese frosting, the leftovers must be stored in the refrigerator.

Stored in the fridge, they will last for up to a week, and you can freeze them for up to 3 months. Let them sit on the counter or in the fridge overnight to defrost.

TIPS AND TRICKS: 

  • Use recipe bananas like you would for banana bread.
  • This can be frozen, see above for how to do that.
  • You can add other additions or toppings to this recipe, see some of my ideas above.
  • This can easily be reduced by half, just make half the recipe and spread the batter into an 8×8 baking dish. Baking times may vary.
  • These must be stored in the fridge since they are frosted with cream cheese.
