Wild Blueberry No Bake Cheesecake Bites, cheesecake filling piped in mini phyllo cups and topped with wild blueberry sauce.
Everybody loves mini food, amiright? What is it about it though? They are just so cute and teenie tiny that everyone swoons?
Yea, let’s go with that. LOL, these little cuties pack a major punch with the crispy phyllo cups, creamy no bake cheesecake filling and sweet wild blueberry sauce. YUM! So good, and SO EASY!
Just dust these babies with powdered sugar and you are good to go! How gorgeous will they be on your big holiday spread?!
Wild Blueberry Cheesecake Bites
Ingredients
Wild blueberry sauce:
- 15 oz frozen wild blueberries
- 1/2 Cup granulated sugar
- 1/4 Cup water
Cheesecake Bites:
- 4 oz cream cheese softened
- 4 Tbls powdered sugar plus more for garnish
- 1/2 tsp vanilla extract
- 15 phyllo shells found in the frozen foods aisle
Instructions
Wild blueberry sauce:
- Place blueberries, water and granulated sugar in a sauce pan. Over medium low heat, simmer the berries until it forms a thick sauce, about 20 minutes. Stirring regularly. Let cool.
Cheesecake Bites:
- Place cream cheese, powdered sugar and vanilla in a small bowl. Mash until combined thoroughly. Place mixture into a piping bag or a small plastic baggie with one corner snipped.
- Fill phyllo cups evenly with cream cheese mixture. Place dollops of blueberry sauce on top. Garnish with powdered sugar, serve and enjoy!

Will phyllo cups get soggy if filled a day before serving?
I would put it on right before serving!
Can the blueberry topping be put on in advance or should I wait to put it on until right before serving? Not sure If it will moisten the phyllo shell if I do it ahead of time? Thanks!
