INGREDIENTS NEEDED (SCROLL TO THE BOTTOM OF THIS POST FOR THE FULL RECIPE CARD):
- Butternut squash
- Potato
- Carrot
- Onion
- Chicken or vegetable broth
- Lemon juice
- Vegetable oil
- Garlic
- Cinnamon
- Ground nutmeg
- Salt
- Pepper

HOW TO MAKE EASY BUTTERNUT SQUASH SOUP RECIPE:
- Warm up vegetable oil in a medium or large pot over medium heat and add potatoes, onion, carrot, butternut squash.
- Stir for 3-5 minutes and add the vegetable or chicken broth.
- Simmer the vegetables until they become soft, about 20 to 30 minutes.
- When done, add lemon juice, season with salt, pepper, cinnamon and nutmeg.
- With an immersion blender, blend the vegetables until creamy. You can also use a regular blender for this, you may need to blend in batches.
- Serve while warm with your choice of toppings.

We have 1-2 ways that you can blend this soup. One is with an immersion blender and that will be handheld and you can put that right in your pot.
The second way is to use a stand-up blender, you will put the rendered and cooked soup in it and then blend it. This will have to be in batches.
In my personal experience, a stand-up blender will produce a creamier soup because you will be blending all the soup at once rather than using the immersion blender and going around blending.
Both will become creamy but if you want a super creamy soup then I would suggest doing it in batches in the stand-up blender.
WHAT CAN I GARNISH OR TOP THIS SOUP WITH?
