Sweet Potato Tots are a yummy side dish perfect for everyday dinners to Thanksgiving feasts! This post was sponsored by Green Giant as part of an Influence Activation for Influence Central and all opinions expressed in my post are my own.
This sweet potato side dish is SO easy, my little secret to having them on the table in under 30 minutes is using Green Giant riced veggies. For this recipe, I used the cauliflower and sweet potato variety!
These whip up in no time being able to use these riced veggies and we like to use them in every day meals as well!
Why this recipe works:
- Using pre-packaged vegetables makes this quick and easy.
- They make a bunch and you can easily double this recipe.
- They go great with any dinnertime meal.
These Sweet Potato Tots are so versatile, you can use them as a side dish as is or use them in recipes like I do!
A ton of prep work is already done for you by picking up a bag. You can find them at your local grocery store in the frozen section by the other veggies.
Some of my favorite recipes that we like to serve these Sweet Potato Tots along with include Baked Parmesan Chicken Tenders, The Best Tomato Soup and Mississippi Pot Roast!
They really go good with a lot of different things, especially when it comes to fall and winter themed foods, even though I love sweet potato anything all year long!
How to make Sweet Potato Tots:
- Microwave Green Giant riced cauliflower and sweet potato for 5 minutes. Mix with flour and spices.
- Using a cookie scoop, scoop out small tots. Top with parmesan cheese.
- Bake for 20 minutes until golden brown and delicious!
Seriously you can’t get any easier than this! You can absolutely make your own by ricing some cooked sweet potatoes as well if you cannot find these in your store.
We have made these a bunch of time with regular sweet potatoes and they work out the same as long as your sweet potatoes are cooked and easy to rice.
As you can tell, this is a low-calorie side dish. I made sure to add lots of yummy spices to make sure they were super flavorful.
We love low calorie dishes and try to add them into our menu routine whenever we can, especially if we are having a heavier dinner or lunch.
It just balances it out the way that we like it so we don’t over indulge in anything, amiright?
What spices are in the tater tots?
For these Sweet Potato Tots I used garlic powder, onion powder, ground cumin, and chipotle powder.
I find these spices really go well with sweet potatoes! It really brings out the flavor of the potatoes themselves and complements them really well.
I even use this combination every time I make sweet potato hash. It goes perfectly with the slight sweetness of the sweet potatoes and a touch of heat and smokiness from the chipotle powder, wow!
We love the sweet and spicy together, it is one of our favorite combination and that is one reason we keep making these Sweet Potato Tots all the time.
Alternatives and Add-ons:
Like food extra spicy? No problem, add more chipotle powder or dip in hot sauce!
Don’t like spicy at all? Leave out the chipotle powder all together.
Serve as is or with a dipping sauce such as ranch or a dollop of sour cream! We love ranch with these, even some chipotle ranch goes a long way.
Whatever your preference is when it comes to dipping sauces probably would work with this Sweet Potato Tot Recipe no matter what.
We are big condiment snobs so we have tried all the things and we found out what we like best with what along the way.
How to store:
These can be stored in the refrigerator for about 2-3 days and can be reheated in the oven at 350 just until they are crisp and warmed through.
These can also be frozen. Bake Sweet Potato Tots as directed, then let cool then store in freezer bag, they should last in the freezer for up to 2 months.
Tips and Tricks:
- You can add any spice combination that you like.
- These can be frozen, read my storage tips above.
- If you want to use fresh sweet potatoes do not cook all the way tender, par cook so there is a little crispness left in the potato.
- To use real sweet potatoes just run them through a ricer too get the texture you want, or you can also grate them as well for a different texture.
- We like to sprinkle some parmesan on top of these for extra flavor, highly recommended.
