Okay guys, I have a confession to make. I’ve been on a diet… *sob*…. and it’s been ahem hell (eek!). Seriously, we have been trying to lose a few (or more!) pounds around here and I have been counting those pesky little calories like a mad woman. So, I took this opportunity to make a healthier dish for the blog too. Now, when you see this recipe you are going to scream at me, “you call THAT healthy?!” I know, this dressing itself isn’t healthy. BUT, when you portion it out correctly with your salad, it is totally doable for a dinner or lunch. Trust me.
Spicy Garlic Salad Dressing
So, if I am going to go wasting calories on a more fatty item, it better be good. And this is GOOD. Also, it has to be flavorful so I don’t need a lot and this recipe definitely delivers! It has everything… slightly spicy, tangy, garlicky, sweet, creamy… and some umami going on (you know umami… when something savory makes you go what IS that, it’s delish!). Your taste buds are really going to be thanking me for this one!
Spicy Garlic Salad Dressing
Ingredients
- 1 Cup mayonnaise
- 1 clove garlic minced fine
- 1 Tbls red wine vinegar
- 1 Tbls water
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1 tsp dijon mustard
- 1/2 Cup cornichons chopped fine
- 1 tsp sriracha
- 1 tsp worcestershire sauce
- 2 tsp sugar
- pepper to taste
Instructions
- Place all ingredients except for cornichons in a bowl and set aside.
- Finely chop the cornichon.
- Add to the remaining ingredients and mix to combine.
- Serve this on a salad, or as a dip for veggies or chips!

Step by Step Directions
Oh man, this is soooo good! You have to try this out, it’s just bursting with flavor. It has a nice light burn as well from the sriracha but if you don’t like any kind of spice definitely leave that out. Let me know how you like this dressing, I know you’re dying to make it soon! 😉

Maybe I’m blind, but I don’t actually see any garlic in the recipe. I think I see some minced cloves in the bowl, though. I’m hoping it’s a typo!

I love this recipe! I make it once a week and keep it in my frig to eat with sweet potato fries – ADDICTED! I leave out the pickles and water and add 2 TBSP of sriracha – extra spicy and yummy

One more thing…I found a copycat Schlotzky’s sandwich on Pinterest…I use this dressing in place of the creamy garlic dressing called for in their sandwich…it’s better than the original creamy garlic dressing they call for. Pure heaven!
