I love blondies, probably even more than brownies. What I really love about them is that they are just the perfect blank canvas to add more flavors to! I added marshmallows, almonds and chopped chocolate to these blondies to make them rocky road! Adding a cream cheese glaze just for an extra pop of flavor! They are soo good and easy to make. The chocolate gets all nice and melty, the marshmallows melt down and just make them stay soft, chewy and gooey on the inside! The addition of almonds gives it a nice crunch to excite your taste buds! The best part was I was able to make these yummy blondies by using printable coupons!!

If you have been here for a while, you know I love using KRAFT products. They are a great quality product and you’d be surprised how many brands they produce! I printed off my coupons and off to Walmart I went! With my coupons I picked up HERSHEY’s milk chocolate bars, JET-PUFFED Marshmallows (minis) and PHILADELPHIA Cream Cheese.

The PHILADELPHIA Cream Cheese was in the refrigerated section:

HERSHEY’S milk chocolate bars were in the candy aisle, I got a 6 pack of regular sized bars.

And lastly, the JET-PUFFED marshmallows were in the baking aisle:

I went home with my goodies to get baking!

Rocky Road Blondies with Cream Cheese Glaze
 
 
Ingredients
  • 1½ Cups light brown sugar, packed
  • ½ Cup butter, melted
  • 2 each eggs
  • 1 tsp vanilla extract
  • 1½ Cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ⅓ Cup sliced almonds
  • 1 Cup HERSHEY'S milk chocolate, chopped, 3 bars
  • 1 Cup JET-PUFFED mini marshmallows
  • 4 oz PHILADELPHIA cream cheese, softened
  • ½ Cup powdered sugar
  • ½ tsp vanilla bean paste or extract
  • 1 Tbls milk or water
Instructions
  1. Preheat oven to 350 degrees. Melt butter and let sit on counter until cooled. In a bowl, mix the flour, baking powder and salt, set aside. Chop the chocolate bars and set aside.
  2. In separate large bowl, add in the eggs and vanilla. With a hand mixer on low, mix to combine. Add in the brown sugar and mix to combine. Add the cooled melted butter and combine. Little by little, add in the dry mixture until fully incorporated, scrapping down the sides as needed. Fold in the chopped chocolate, marshmallows and almonds.
  3. Line a 13x9 inch pan with parchment paper or grease well. Evenly spread blondie mix into pan. Bake for 30-35 minutes, until a toothpick inserted comes out clean. Place on wired rack to cool completely.
  4. While the blondies cool, mix the glaze by creaming the cream cheese until smooth, add in the remaining ingredients.
  5. Cut blondies into squares and glaze with the cream cheese mixture. Serve and enjoy!

and glaze with the cream cheese mixture. Serve and enjoy!

Seriously, these are sooo yum! If you want, you can just glaze all the blondies at once without cutting them into squares, completely up to you!

I was so glad I found those printable coupons, making these blondies were really inexpensive. Most of the ingredients I already had on hand, I bet you have them already too!

You can serve them warm or refrigerate them and they set up a little more. Warm them are very gooey but cooled they are more soft and chewy. Either way they are ah-mazing!
