FREQUENTLY ASKED QUESTIONS ABOUT THIS RECIPE:

If your Chocolate Rice Pudding Recipe didn’t thicken as much as you would have liked, this means it was not cooked long enough.

To thicken this recipe is with cornstarch and water mixture.

Mix about 1 Tbs cornstarch and 1 Tbs of water together and pour it into the pudding and stir over medium-low heat and it should thicken right up.

Any high-quality chocolate chips or chocolate chunks work perfectly for this recipe.

We went with semi-sweet chocolate. It balances great with the sweetness of the pudding.

You can also use milk chocolate and dark chocolate if you’d like.

Chocolate chunks work great and you can also use a chocolate baking bar as well, german or semi-sweet is best.

I would not use bittersweet for this.

All you rice pudding lovers will be all over this one. Bring on the additions!

  • Add cocoa powder to enhance the chocolate flavor for all the chocolate fiends out there.
  • Stir in mini chocolate chips or white chocolate chunks for extra texture and sweetness.
  • Sprinkle with brown sugar on top for a caramelized finish to this comforting dessert.
  • Drizzle with condensed milk or coconut milk for added creaminess and richness.
  • Mix in a dollop of cream cheese to create an even more creamy pudding.
  • Top with fresh fruits like strawberries or bananas to complement the rich flavors.
  • Garnish with chopped nuts such as almonds or walnuts for a crunchy contrast.
  • Add a pinch of cinnamon or nutmeg for a spiced twist on this classic rice pudding.
  • Serve with a scoop of ice cream for a decadent treat, perfect for any time of day.
  • Include a splash of vanilla extract to deepen the flavor profile.

This one gets a five star rating in my house.

If you need to change things up, check out this list of substitutions.

  • Instant rice: Use leftover rice, white rice, or even brown rice; just adjust the cooking time to achieve the desired creamy texture.
  • Semi-sweet chocolate chips: Substitute with dark chocolate chips, milk chocolate, or cocoa powder for different levels of sweetness.
  • Whole milk: Replace with coconut milk or almond milk for a dairy-free option in this healthy recipe.
  • Granulated sugar: Use brown sugar or honey for a deeper, more caramel-like sweetness.
  • Unsalted butter: Swap with coconut oil or leave it out for a lighter version.
  • Ground cinnamon: Try adding spices like cardamom or allspice for a unique flavor twist.

Easy Chocolate Rice Pudding can be stored in an airtight container in the refrigerator where it will last up to one week.

This can also be frozen, cool your pudding and then place in a freezer container or smaller containers if you want to portion out your servings.

Place in the freezer and it should keep for up to 3 months.

Let defrost in the refrigerator overnight to thaw.

If you want to reheat this, it is great served chilled as well, you can place it in the microwave or in a saucepan until heated through.

DANA’S TIPS AND TRICKS:

  • This recipe is formulated to use instant rice so make sure you use that instead of long-grain rice.
  • Use any of your favorite chocolate flavors either in chocolate chips, chocolate chunks, or baking bar.
  • If this turns out too thin it can be thickened up with cornstarch and water, see my suggestions above on how to do that.

  • This can be frozen, see my tips above.
