Loaded Twice Baked Potatoes

When I’m making these I figure one half of a potato is good per person, so this recipe I have today serves 4. But, of course adjust to your families eating habits!
How to Bake Potatoes
When baking potatoes, I pre heat my oven to 375 degrees. Wash off the potatoes with a bristle brush (so I can eat the skins, YUM!), pierce with a fork all over, just to break the skin. Then, pop it directly on the oven rack. I start checking them after an hour with a wooden skewer but a small pairing knife or thermometer will do. Once the skewer slides all the way through to the core of the potato with no resistance they are done. For the potatoes pictured here I consider these medium sized and cooked for just under two hours.
Loaded Twice Baked Potatoes
Ingredients
- 2 russet potatoes medium sized, baked
- 4 slices bacon chopped into 1/2 inch dice and cooked
- 2 Tbls unsalted butter
- 1 Cup shredded cheese of your choice I use monterrey jack/cheddar blend
- 2 Tbls sour cream plus more for topping
- 2 scallions sliced
- salt and pepper to taste
Instructions
- After your potatoes are baked, let them cool on the counter for about 20 minutes.
- Take a knife and slice them down the center long ways and scoop out the insides, keeping the skin intact.
- Place insides of potato in a bowl, add half of the bacon, all of the butter, 2 Tbls of sour cream, half of the cheese and salt and pepper to taste. (Taste the mix BEFORE adding additional salt, then season to your taste.)
- Place this filling back into the potatoes skins, top with the remaining cheese and put back into the oven at 375 degrees until the cheese has melted and it has warmed through. About 5-10 minutes.
- Top them off with more sour cream, the remaining bacon and scallions, enjoy!

Is there any reason I cannot cook the potatoes in the microwave to save time?
I love twice baked potatoes and get excited when I see them on a menu. Never made my own but you make it look so simple I’m thinking these are going to be prominently in with my supper menu next week 🙂

I absolutely love twice baked potatoes. Yum. I always attempt to make them but I have issues with scooping the potato out of the skin, then I end up just making mashed potatoes. I should attempt them again though. They are so delicious.
