Goat Cheese Salad with Poppy Seed Dressing
This goat cheese salad with poppy seed dressing is bright, refreshing and really easy to make.

Ingredients
- 4 cups spring mix lightly packed
- 3/4 cup halved red grapes
- 1/2 cup crumbled goat cheese
- 1/4 cup thinly sliced red onion
- 1/4 cup toasted chopped walnuts
- prepared Poppy Seed Dressing to serve
Instructions
- Add spring mix to your plates or serving bowl.4 cups spring mix
- Top with the grapes, goat cheese, onion, and walnuts.3/4 cup halved red grapes, 1/2 cup crumbled goat cheese, 1/4 cup thinly sliced red onion, 1/4 cup toasted chopped walnuts
- Pour your desired amount of dressing to serve.prepared Poppy Seed Dressing
- Toss lightly and serve immediately.
Notes
This recipe uses my Poppy Seed Dressing, feel free to use your favorite!
- Toss the spring mix gently. Avoid squashing.
- Break that goat cheese log with your fingers- it's messy but fun!
- Slice the red onion super fine.
- Warm the walnuts in a dry skillet for a few minutes to make them extra crunchy.
- Add salad dressing right before eating. This keeps your leafy greens crisp!
