Add the all-purpose flour, baking powder, granulated sugar, brown sugar, ground cinnamon, ground ginger, ground nutmeg, and salt to a large mixing bowl and combine.
In a separate mixing bowl, whisk the eggs together. Then add the milk, vegetable oil, molasses, and vanilla extract. Whisk to combine.

Pour the wet ingredients into the dry flour mixture, then stir until just combined (don’t overmix!). Allow to rest for 5 minutes.
