Ingredients
- 1 20 count package refrigerated Pillsbury Pumpkin sugar cookie dough for the crust
- 1 20 count package refrigerated Pillsbury Ghost sugar cookie dough for the crust
- 16 ounces cream cheese softened to room temperature
- 1/2 cup confectioners sugar
- 1 1/2 teaspoons vanilla extract
- 8 ounces whipped topping one tub, thawed
- green and orange frosting optional, for garnish
- Halloween sprinkles and candy eyes optional, for garnish
Instructions
- Preheat the oven to 350 degrees Fahrenheit and grease a 9 inch springform pan.
- Unwrap the cookie dough and place the rounds in rows across the bottom of the springform pan, alternating the ghost and pumpkin cookies. Halve a few cookies to fill the edges. Reserve any leftovers to bake for garnish.
- Bake for 12 to 14 minutes, until the cookie crust edge is light golden brown. Remove from the oven and allow to cool fully.
- Beat the cream cheese, confectioners sugar, and vanilla extract until smooth and creamy.
- Fold in the whipped topping until fully incorporated.
- Spread the cheesecake filling over the cooled crust, cover with plastic wrap, and refrigerate for 2 hours or overnight until firm.
- When ready to serve, release the springform ring and garnish with frosting, sprinkles, candy eyes, and extra baked cookies if desired.
Notes
- Store leftovers covered in the refrigerator for up to 3 to 4 days.
- This dessert can be fully prepared the night before. Add the frosting and sprinkles right before serving so the colors stay bright.
- Any refrigerated shaped sugar cookie dough works as the crust, so swap the shapes to match the holiday.
- Use full fat block cream cheese, softened, for the smoothest filling. Cold cream cheese will stay lumpy.
