Ingredients

2 refrigerator pie crusts
1 & 1/4 cups blueberry pie filling
1 large egg
Splash of water
1 tablespoon decorators sugar
Olive oil spray

Instructions

Thaw the pie crust per the directions on the back of the box.

Roll out the pie crust on a well-floured work surface and cut out 3 5-inch circles from each crust. You can use a cookie cutter for this or trace around something that is 5-inches around. Discard the scraps.
Place 2 tablespoons of the pie filling on the bottom half of the pie crust with a ½ inch border.

Dip a fingertip into some cold water and run it around the edge of the circle.
Fold the crust over the filling and gently pinch the edges together. Take a fork and crimp the edges closed.
Place the egg with a splash of water in a small bowl and whisk together well. Brush the egg wash all over the pies.

Sprinkle the top of each hand pie with decorator’s sugar.

Make 3 small slits in the pastry, this will help the pie release excess steam.
Preheat the air fryer to 360°F for 5 minutes.
Spray the basket with olive oil spray.

Transfer the pies, not touching, into the basket. You may need to do this in batches.
Air fry for 7-9 minutes until golden brown. Serve immediately.

Notes

Make Ahead: Prepare the hand pies up to the air frying step and freeze. Cook directly from frozen when ready to serve.
Homemade Whipped Cream: Serve with a dollop of homemade whipped cream for an extra special treat.
