Whenever I’m in the mood for a classic cocktail that’s both refreshing and luxurious, I reach for my favorite. Today, I’m sharing that favorite with you in this Peach Bellini Recipe.
Peel and take out the pit from the peaches and chop them up. Place them into a high powdered blender or food processor along with the simple syrup and raspberries.
2 medium peaches, 2 tablespoons simple syrup, 5 raspberries
Blend until smooth.
Place 1 ounce of the peach puree into the bottom of a glass. Top with ½ ounce of peach schnapps.

Pour in some prosecco, be careful so it doesn’t overflow. Gently stir and top with more prosecco leaving a little room for garnish.

Add peaches, raspberries, and mint for garnish if using, and serve immediately.

Notes
Nutrition is calculated without added Prosecco.
Use a vegetable peeler for easy peeling of peaches.
If peaches aren’t in season, frozen peaches work, but remember, fresh is always best!
Serve in a chilled champagne flute to keep your bellini cool longer.
Always add prosecco slowly to avoid overflowing.
