Preheat oven to 275 degrees. Rinse off apples and dry. Cut in half crosswise and using a melon baller, scoop out the seeds and core. Using a mandolin on the second to thinnest setting, CAREFULLY slice apples (use the handgard why dontcha?!) into rounds. Or, cut verrrry thin with a knife.
Place on cookie sheet and bake for 30 minutes. Flip over and bake an additional 30 minutes or until apple slices are dried out but not brown!
