Equipment
Ingredients
- 1 pound boneless skinless chicken breast cut into bite sized pieces
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup cornstarch
- 1 tablespoon vegetable oil
- 1/3 cup red onion chopped
- 3 garlic cloves minced
- 1 small red chili pepper finely chopped
- 1 medium red bell pepper medium diced
- 1 cup green beans, 1-inch pieces
For the sauce
- 1/4 cup light soy sauce
- 1/4 cup honey
- 1/4 cup sweet chili sauce
- 2 tablespoons ketchup
- 1 tablespoon rice wine vinegar
- 1 tablespoon minced fresh ginger
- 2 teaspoons red chili flakes
- green onions, thinly sliced garnish
- sesame seeds garnish
Instructions
- In a large bowl, season the chicken with salt and pepper. Add the corn starch and toss so all the pieces are coated.
- Preheat the air fryer for 5 minutes at 350 degrees f.
- Spray the air fryer basket with olive oil spray and place the chicken into the basket, not touching, in a single layer. You will have to cook in batches.
- Spray the chicken pieces generously with olive oil spray. Air fry chicken for 3 minutes on one side, then flip the pieces over and cook for another 3 minutes or until golden brown and an internal temperature reaches 160°F. Place them on a plate and repeat with other chicken pieces.
- Whisk together the light soy sauce, chili sauce, ketchup, apple cider vinegar, ginger, and red pepper flakes to make the sauce in a small bowl.
- Add the chopped onions, garlic, and chopped red chili in a large skillet or wok over medium heat. Cook until fragrant, about 30 seconds, stirring constantly.
- Add the bell peppers and green beans. Stir fry it for a 2-3 minutes until the vegetables become tender.
- Next, add the crispy chicken, pour the sauce, and simmer for 5 minutes; mix all the ingredients until the chicken is evenly coated and the sauce thickens. Stir frequently.
- Serve hot over rice or your desired side with a sprinkle of sesame seeds and green onion.
Notes
- Tons of custom options, see my tips above on that.
- Great for a weeknight meal since it is ready in about 15 minutes.
- This freezes well, see my tips above on how to store.
- Use fresh ginger. The flavor of fresh ginger is much more intense than ground ginger, so it’s worth the extra effort to use it whenever possible.
- Don’t overcook the chicken. Chicken is best when it’s cooked through but still moist. Overcooked chicken will be dry and tough. Pull the chicken from the air fryer at 160°F.
- Use a good quality soy sauce. Soy sauce is a key ingredient in ginger chicken, so it’s important to use a good quality soy sauce.
- Don’t be afraid to experiment. Ginger chicken is a versatile dish, so feel free to experiment with different ingredients and flavors.
