In a small bowl, whisk together honey and oil until well combined.
Place half the cheese cubes in to a mason jar. Top with 3 stems of thyme. Pour half the honey mixture over the cheese. Repeat with remaining, cheese, thyme, and honey. Close jar.
Place jar in the fridge for a day or two. Turn jar over periodically to redistribute the honey.
When ready to serve, pour the contents of the jar into a serving bowl.
Notes
*Note: If you need a last minute appetizer plate, slice the cheese instead of cubing it, layer the cheese slices over a plate, drizzle the honey on top, and sprinkle with fresh thyme leaves (no stems). Tah-dah!
