Place cookies in a food processor. Process until they turn into crumbs. Add in the cream cheese, pulse until mixed and forms a dough like consistency.
I used a scooper and scooped out 1 inch sized balls and placed on a sheet tray. Roll into balls and place in the freezer for 10 minutes.
While cookie balls are freezing, melt the chocolate. Dip cookie balls into the chocolate and set back on the sheet tray and immediately decorate with the sprinkles so they stick to the chocolate.
Refrigerate one hour or until firm, enjoy!
